Soup for a crowd
Happy New Year! I hope your year has started out with a bang! I have just returned from a two-week Christmas vacation! We traveled to warm sunny Arizona and took a four-day trip to Mexico! It's tough coming home to cold, gray skies, but this creamy tomato soup helped!
There were 26 of us that traveled to Mexico together - that's my parents, all their kids (now adults) and the kids' spouses and all 12 grandchildren! And what a trip it was!
We rented a house - or actually several houses all connected by a courtyard. The main house sat right on the beach - we were in pure heaven!
The trip included lounging in the sun, playing beach volleyball, flying kites, kayaking, playing about a gazillion games of cards and one flash mob dance put on by the grandkids and two of the kid-like adults! We also had tons of food, food, and more food!
Everyone signed up for meals - we had breakfast, lunch, dinner and snacks all planned. We ate some really amazing food.
I made my couscous salad the night we had shrimp, oysters and steamed clams. For lunch I also made Caesar salad with a homemade creamy Caesar dressing. I quadrupled the dressing recipe and prepared it before the trip and brought it in a storage container. I used 18 heads of romaine lettuce and cooked and sliced 12 chicken breasts to go with the salad.
Whew - 26 people sure can eat a lot of food!
By the time we got back to Arizona after that amazing trip, we were all tired and needed a break from all those amazing meals, but we were all still a bit hungry and needed something to eat. My sister, Suzi whipped up a batch of quick tomato soup.
Since some of the original group parted, she only had to feed 15 of us! She shared her recipe with me and I made a few tweaks. Don't worry, my version feeds 6 - not 15!
I made this simple tomato soup for lunch but since my kids were up skiing there's a lot left over.
I froze several single portions and am planning that for my lunch when I head back to work. Maybe that will help with the transition...
One of my favorite ways to eat this homemade soup is with a grilled cheese sandwich or a grilled turkey panini! Do you love to dip your sandwich into tomato soup? I do!
It's also delicious topped with a few homemade croutons or served with couscous cakes.
Can I make this soup vegan?
Yes! Just omit the cream. This soup tastes delicious without the cream too!

Creamy Tomato Soup
Ingredients
- 2 28 oz can Tomato Sauce
- 2 Tablespoons Tomato Paste
- ⅓ cup Brown Sugar
- 1 teaspoon Salt
- ¼ teaspoon Paprika
- ⅛ teaspoon Garlic Powder
- ⅛ teaspoon Onion Powder
- 1 Bay Leaf
- ½ cup Heavy Cream
Instructions
- Place all ingredients - except heavy cream - into a pot.2 28 oz can Tomato Sauce, 2 Tablespoons Tomato Paste, ⅓ cup Brown Sugar, 1 teaspoon Salt, ¼ teaspoon Paprika, ⅛ teaspoon Garlic Powder, ⅛ teaspoon Onion Powder, 1 Bay Leaf
- Heat over medium high heat until simmering.
- Remove from heat. Remove bay leaf.
- Add heavy cream, stir and serve.½ cup Heavy Cream

18 heads of romaine lettuce!? Holy cow, that's a lot of lettuce. But then again, there were a lot of folks there! I remember you talked about the family trips in the past, and those sound like a ton of fun. Crazy adventures like that lead to great memories for sure. And also to great soup recipes, too. 🙂 I love a good tomato soup with grilled cheese, and while we've made tomato soup a couple times lately, we haven't served it with grilled cheese. Now I've got a craving that I need to fill! 🙂
