Grilled turkey sandwich
I love a great sandwich, especially a grilled sandwich! This turkey panini sandwich has the perfect crunch that I love in a grilled sandwich and is filled with just a handful of great ingredients.
I used a panini press to make this sandwich, but you can also use a stovetop griddle or a cast iron skillet.
These sandwiches are perfect for lunch or I love them for dinner along with a bowl of soup. Perfect for when you're not looking for a fancy dinner but want something satisfying and delicious!

- Sourdough Bread - I love how sourdough bread toasts up to golden crispy perfection. You can use any sliced bread that you have on hand.
- Deli Sliced Turkey - Deli turkey is usually thinly and evenly sliced which makes it perfect for a sandwich. If you're using leftover turkey, try to slice it as thin as possible.
- Cheese - Use provolone, swiss, cheddar or Monterey Jack.
- Tomatoes - I don't always include tomatoes on a grilled sandwich, but it goes so perfectly on this turkey sandwich.
- Mayo and Mustard - The perfect combination to add some creaminess and tanginess. Use Dijon or a coarse ground mustard.

- Preheat your panini grill
- Slice the tomatoes and place slices on a paper towel. This helps absorb the excess juices from the tomato which can make a soggy sandwich.
- Butter the outside of two slices of bread. Lay them buttered side down.
- Combine the mustard and mayo. Spread on the inside (or the side facing up) of the sandwich.
- Place slices of turkey on top of the bread, then cheese and then the tomatoes.
- Add the other piece of bread on top with the butter side facing out.
- Place on panini grill and cook until golden brown and heated through.

- Use any type of deli meat that you'd prefer. This sandwich works well with ham, pastrami or roast beef.
- Choose your favorite cheese.
- Pat the tomato dry with a paper towel before adding to the sandwich.

- Place sandwich on preheated skillet and cook until the bottom is golden brown.
- Flip sandwich and press down with the flipper or spatula to help flatten the sandwich.
- Cook until both sides are golden brown and the sandwich is fully heated through. You may need to flip the sandwich a few more times to avoid burning.
