Honey Lemon Shrimp

Why make this recipe

Grilled honey lime shrimp is packed full of flavor. The shrimp is given a quick marinade in freshly squeezed lime juice, honey and garlic. Then it's grilled on a hot grill and basted with more of the marinade.

Everything is ready in about 25 minutes! Talk about easy! This shrimp is delicious eaten hot off the grill or chilled. Just think of the possibilities. Serve as an appetizer or an entree. Serve leftovers (if there are any) over a salad for lunch.

This recipe is easily adjustable to serve as many people as you need.

Key ingredients

A bowl with shrimp next to fresh limes.
  • Shrimp - Raw, medium sized. I used 26-30 size (26-30 per pound)
  • Limes - Fresh squeezed juice
  • Jalapeno - Adds just a touch of heat
  • Honey
  • Garlic
  • Rice Vinegar

Step by step directions

  • Create the marinade by combining lime juice, rice vinegar, honey, garlic, sliced jalapeno and salt and pepper
  • Place cleaned shrimp, with tails left on in a zip top bag. Add the marinade reserving ¼ cup to use for basting.

  • Place in the refrigerator for 15-20 minutes. Turn bag 1-2 times during marinating time. Do not marinate for longer than 30 minutes!
  • Remove shrimp from marinade and discard marinade
  • Skewer shrimp and place on a hot preheated grill for 2-3 minutes per side. Cook over high heat.

Recipe tips

  • Prepare your grill - make certain it's scraped, lightly greased with oil and fully preheated. Start your grill on high for at least 10 minutes before adding shrimp.
  • Be certain to reserve ¼ cup of marinade for basting shrimp before adding it all to the bag.
  • Give a quick baste with reserved marinade when you place shrimp on grill
  • Shrimp will cook in 2-3 minutes per side depending on the temperature of your grill and the size of your shrimp. My shrimp cooked in about 2 minutes per side.
  • Once shrimp have developed a golden color on the first side flip them. Add an additional basting of marinade
  • Don't overcook shrimp or they will become tough. Shrimp will continue to cook slightly once removed from the grill.
  • When using frozen shrimp, allow shrimp to fully thaw and then rinse in cool water before adding to marinade

Recipe Faqs

Can I make ahead of time?

Yes, you can make the marinade ahead of time, but only let shrimp marinade for 15-20 minutes before cooking. Longer than 30 minute the lime juice actually begins to cook the shrimp.

How long will the cooked shrimp last?

Once cooked and cooled, the shrimp can be stored in the refrigerator for up to two days.

What a delectable marinade - lime and honey is so good together, and I love the touch of heat from the jalapeño. I would love this over rice and with a salad. A perfect summertime dinner. 🙂 ~Valentina
