An English Muffin Breakfast Sandwich is perfect for weekend breakfasts, a meal on-the-go, or stocking up the freezer.
This delicious breakfast sandwich is filled with eggs, cheese and bacon, ham or a sausage patty. You could also leave the meat out and have a vegetarian breakfast sandwich.

Easy and delicious breakfast
I love breakfast and I love making breakfast! However, sometimes we are very rushed in the mornings. These breakfast sandwiches are perfect for eating on the go!
When we need to get out the door quickly in the morning, I will often make a batch of these sandwiches, wrap them in foil and hand them to the kids on the way out the door.
These egg sandwiches can also be made the night before and then heated in the microwave in the morning.
What I love best about these English muffin sandwiches is you can make these sandwiches all your own. Pick your favorite kind of cheese, select your meat (or omit and make it vegetarian.)
I usually make these with scrambled eggs, but you could also cook your eggs over easy. They'll become a little messier to eat, but just as delicious!
These sandwiches are perfect for lunch or dinner too! Don't let the name fool you that they can only be eaten for breakfast!
Key ingredients
- English muffin - pick your favorite kind; sourdough, whole wheat, traditional or cinnamon raisin!
- Cheese - cheddar, pepper jack, colby, American
- Meat - crispy bacon, sausage patty, sliced ham, pastrami
- Egg - plan on one egg per sandwich
Step by step directions
- Toast the English muffin in a toaster.
- You can butter the toasted muffin or leave plain.
- Scramble the egg in a bowl.
- Add a dash of salt and pepper.
- Heat a nonstick pan over medium heat and spray lightly with a nonstick spray.
- Use a spatula to contain and shape the egg
- Flip egg and finish cooking
- Assemble the sandwich by placing half the toasted muffin down
- Add meat, eggs and then cheese
- Top egg sandwich with the other half of the English muffin
To make several breakfast sandwiches at once
To make breakfast sandwiches for a group, you'll follow the same basic steps, but increase the amounts.
- Plan one egg per sandwich.
- Cook all eggs together and then cut into portions.
- Assemble sandwiches.
- Wrap in foil or parchment paper to keep warm.
Recipe tips
- Don't break up the eggs while cooking. Try to keep the egg in one big patty. It makes it easier to eat the sandwich because the egg won't fall out the sides.
- May add cheese directly to the top of the eggs while in the pan. This does help promote a meltier cheese.
- Make certain you sausage, bacon or ham is warmed before adding to the sandwich.

Yes, these breakfast sandwiches can be frozen. Allow sandwich to cool. Wrap in foil and then place in a freezer safe bag.
To use, pull a sandwich out and unwrap from foil. Wrap in a paper towel and place on a microwave safe dish. Microwave for 1-2 minutes until warmed through.
Wrap each sandwich in foil and place them in a preheated 200°F oven until ready to eat. Sandwiches are best eaten within 30 minutes.

Ingredients
- 1 egg
- salt and pepper
- 1 English Muffin
- 1 sausage patty, bacon or ham slices (cooked)
- 1 slice cheese (cheddar or pepper jack)
Instructions
- Toast English muffin.1 English Muffin

- Assemble sandwich by placing meat, egg and cheese on bottom layer of English muffin. Place top half of muffin on top.1 sausage patty, bacon or ham slices, 1 slice cheese
- Eat right away, or wrap in foil to keep hot.

These are right up my ally Kathy! Breakfast is the one meal of the day that I actually enjoy cooking =) We have Tim Hortons around us and I love their breakfast sandwiches but they are $3.50 a piece. Too much! My kids each devour one or two and my husband I are want at least 3!) Do doing some quick math ~ that's really pricy! Gotta cook at home if we ever want that trip to Florida.
