A breakfast panini makes a delicious breakfast! Filled with eggs, cheese, and your choice of meat! Or leave the meat out and make it a vegetarian sandwich.

Breakfast Sandwich
Breakfast sandwiches are a favorite in our house. We love English muffin breakfast sandwiches and I love to make them for breakfast on the go. These panini breakfast sandwiches are our new favorite!
The toasted bread has a delightful crunch and the sandwich is filled with eggs, cheese, and bacon, ham, or sausage. These breakfast paninis make a great breakfast!
This recipe is for one sandwich, but I often will make several sandwiches at once and then I will place two sandwiches in my panini press at a time.
Key ingredients
This section reviews the best ingredients and substitutions for this recipe. For an exact list of ingredients and quantities, check the recipe card below.
- Bread - I used round sourdough sandwich bread, but any sourdough bread will do! You could also use regular sandwich bread or an English muffin.
- Eggs - Plan on one egg per sandwich.
- Meat - Your choice; crispy bacon, sliced ham, cooked sausage patty, or leave the meat out altogether!
- Cheese - Pick your favorite. Use sliced cheddar, swiss, provolone, or pepper jack.
Step-by-step directions
In this section, I share step-by-step photos, cooking methods, techniques, and a general overview. For detailed instructions, temperatures, and timing, check the printable recipe card below.
- Scramble the egg together so the white and yolk are completely blended. Add a bit of salt and pepper.
- Place in a preheated skillet over low to medium-low heat. Cook until the egg begins to set. Push sides in towards the center. Flip and cook until fully cooked through to your liking.
- Butter two slices of bread and place butter side down.
- Top with meat, cooked egg, and cheese.
- Place the top slice of bread on with the butter side facing up.
- Place the sandwich on a preheated panini press and cook until the bread is nicely toasted and the cheese is melted, about 4-6 minutes.
- Remove from press and serve hot.
Recipe tips
- Try to keep the egg in one piece, rather than multiple broken pieces like traditional scrambled eggs. One piece stays together better in the sandwich while you're eating it.
- To make the sandwich cheesier, add a slice at the bottom of the sandwich and another slice at the top.
- Sandwich is best eaten while hot or while still warm.
To make more than one breakfast sandwich
- Plan on one egg per sandwich. Cook all the eggs at once and then divide the cooked egg into smaller pieces for the number of sandwiches needed.
- Assemble the sandwiches and cook 1-2 sandwiches at a time on your panini press.
- Serve right away, or to serve all at once, wrap the cooked breakfast sandwiches in foil and place in a warm, 300°F oven while the other sandwiches cook.
Frequently asked questions
These breakfast sandwiches are best eaten when they're made. However, you can precook the egg and the meat. Then in the morning, just assemble and place in the panini press.
Just make certain everything is fully heated through before serving.
