Oatmeal Chocolate Chip Cookies

Crispy Oatmeal Cookies with Chocolate Chips! These brown sugar oatmeal cookies are crispy around the edges and soft and chewy in the center.

I’ve never met a cookie I didn’t like and these oatmeal chocolate chip cookies are at the top of my favorites! Whip up a batch of these cookies in almost no time at all using ingredients you already have in your pantry and refrigerator.

What type of oatmeal do I use?

There are several types of oatmeal available at the grocery store. For baking I like to use old fashioned oats or rolled oats. They are a bit thicker and heartier than quick oats or 1 minute oats. If all you have available are quick oats, you can use them. The oatmeal will not be as defined in the cookies and won’t have all the texture you’d have with the old fashioned oats. Do not use instant oats for these cookies.

I know oatmeal cookies traditionally have raisins, but the unexpected is sometimes delicious. I’ve added chocolate chips to these cookies. You just can’t go wrong with a little extra chocolate.

To make cookies

  1. Cream butter and sugar together
  2. Add eggs
  3. Add vanilla
  4. Mix in flour, baking soda, cinnamon and salt
  5. Fold in oats and chocolate chips
  6. Scoop mixed cookie dough onto an ungreased baking sheet

Tips for making cookies

  • Use softened butter
  • Mix well between each addition of ingredients
  • Scrape down sides of bowl to make certain all ingredients are well mixed
  • Preheat oven before baking
  • Do not grease your baking sheet
  • Use a small scoop to keep cookies the same size
  • Cool cookies for 2 minutes on baking sheet. Then move cookies to a baking rack to continue cooling.

To store cookies

Allow cookies to fully cool on a baking rack. Gently stack cookies in a cookie jar or an airtight container. Cookies are best eaten within 3-4 days.

To freeze cookies

Place cooled cookies in a freezer container or a freezer bag. Place in a freezer for up to 3 months. To use simply remove from freezer and allow to thaw.

Ingredients
  

  • 1 cup butter (softened)
  • 1 1/2 cups brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 3 cups oatmeal
  • 2 cups chocolate chips

Instructions
 

  • Preheat oven to 375 degrees
  • Cream together butter and brown sugar.
  • Add eggs and mix until well combined. Mix in vanilla.
  • Add flour, salt, baking soda and cinnamon. Mix until combined.
  • Stir in oatmeal and chocolate chips.
  • Scoop cookie dough onto an ungreased baking sheet pan.  Bake for 10-12 minutes.

    What a coincident! I’ve never met a cookie I didn’t like either! 😉 I’m a soft and chewy cookie kind of girl, through and through. But my husband is a crispy kind of cookie guy, so I KNOW he would just adore these! I mean, with oatmeal and chocolate chips, what is not to love, right!? Cheers!

    Lovely cookies, I like baking some too when we are so many hours on the road. And altohugh I do like a chewy cookie as well, crispy ones are my favorites.
