Bing cherry crumble
This Bing cherry crumble makes a perfect summertime dessert. The filling is all cherry with a bit of sugar for sweetness. And the topping is a simple crumble that is mixed together and then literally crumbled over the top.
Once baked, the crumble becomes nestled into the cherries and adds the perfect topping. Just add a scoop of vanilla ice cream and you have a perfect dessert.
Cobblers, crisps, and crumbles
Have you ever wondered what the difference is between a cobbler, a crisp, and a crumble? They are all very similar. The filling can be identical in all three, but the topping is just slightly different.
A cobbler is made with a rough biscuit-like topping. The topping is scooped onto the filling leaving a cobbled surface like in this Peach Blackberry Cobbler.
A crisp is typically made with a granola topping that becomes slightly crispy while baking. This Huckleberry Crisp makes a delicious dessert.
And a crumble has more of a shortbread or streusel-like topping that is crumbled over the top.

- Combine the cherries, granulated sugar, and cornstarch together in a bowl
- Place in a greased baking dish
- Make the crumble by combining the flour, brown sugar, cinnamon and melted butter. Mix just until everything comes together. The mixture should be a bit clumpy.
- Crumble the mixture over the cherries. The best way to crumble is to take a handful of the mixture and crumble small amounts with your fingers.
- Bake in a preheated 375°F oven for 30-35 minutes until the topping is browned and the mixture is bubbly

- If using frozen cherries, don't thaw them before using. Increase baking time by 5-10 minutes.
- I baked in a 7x11" pan. You could also use a 9x9" sized pan.
- Serve warm or at room temperature

- Cover and store cooled cherry crumble in the refrigerator for 2-3 days

This recipe uses sweet cherries, not sour pie cherries. Use Bing, Ranier, Queen Anne, or other fresh sweet cherries.
Variations
- Use prepared cherry filling
- Sprinkle slivered almonds on top of the crumble before baking
- Reduce flour to ¾ cup and add ⅓ cup of oats to the topping
- Make it into a crumble pie! Just pour the filling into an unbaked pie crust and add topping.

- 5 cups Bing cherries (pitted, about 1 ½ pounds of cherries)
- ½ cup granulated sugar
- 2 tablespoons cornstarch
Topping
- 1 cup flour
- ½ cup brown sugar
- 1 teaspoon ground cinnamon
- ⅛ teaspoon salt
- ½ cup butter (melted, salted butter)
