An easy to make bar cookie bursting with oats, chocolate and walnuts! These oatmeal chocolate chip bars are crispy on the edges and soft in the middle.

These chocolate oat bars might be baked in a pan, but to me they are still a cookie! Every bite is loaded with chocolate and lots of oats.
They are crispy on the outside and soft and chewy on the inside.
Since these cookies are baked as a bar, they are super simple to make. Once the cookie dough is mixed, simply add to a baking dish and bake. No need to scoop out individual cookies!
These oatmeal chocolate chip bars are perfect for packing into lunch boxes, serving as an after-school snack or bringing to a potluck!

Key ingredients
- Oatmeal - old-fashioned rolled oats
- Chocolate chips - milk chocolate, semi-sweet or dark chocolate chips
- Walnuts - could also use pecans
- Butter - salted butter at room temperature
- Brown sugar
- Pure vanilla
Making Oatmeal Chocolate Chip Bars
- Beat butter in a mixing bowl until soft
- Add brown sugar and mix for 2-3 minutes until light and fluffy
- Beat in eggs and vanilla
- Add flour, oats, baking soda and salt
- Fold in chocolate chips and walnuts
- Place dough in a lightly greased 9 x 13" baking dish
- Spread dough as evenly as possible
- Bake in a preheated 350° oven for 30 minutes
- Allow bars to fully cool before slicing and serving

- Fully whip butter and brown sugar together. It will become light and fluffy.
- Use old-fashioned rolled oats for a hearty texture
- This is a stiff dough. Use a sturdy spatula, a strong spoon or your hands to level the dough.

- Allow bars to cool before slicing

- 1 cup butter (softened)
- 1 ½ cups brown sugar
- 2 teaspoons vanilla
- 2 eggs

- 1 ½ cups flour

Instructions
