Chai cookies are a delicious sugar cookie with a hint of cardamon, cinnamon and cloves. These spiced sugar cookies are a delicious crisp cookie with a soft interior.

These chai sugar cookies have all the delicious spices you'd find in a chai tea latte, but in a cookie form! Enjoy these with a glass of milk, a cup of coffee or a chai latte!

Cardamon

Cardamon is a spice that is made from a seed that is grown in a pod. The seeds are ground and has an intense flavor that is slightly sweet and warm. Cardamon is used in the cookie dough and added to the sugar the cookies are rolled in just before baking.

How to get perfectly sized cookies?

I often use a scoop to get evenly sized cookies. For these cookies I used a 1 tablespoon size cookie scoop.  

To make cookies

  1. Add butter and sugar to a mixing bowl and mix for 1-2 minutes until light and fluffy.
  2. Mix in eggs and vanilla 
  3. In a separate bowl, combine flour, baking soda, salt and spices
  4. Slowly add flour to butter mixture

  5. Scoop cookies using a cookie scoop or a small ice cram scoop 
  6. Place in a bowl with sugar and spices
  7. Roll cookies in sugar
  8. Place on a lined or lightly sprayed cookie sheet

  9. Bake in a preheated 375 degree oven for 10-12 minutes

How to store cookies

Allow cookies to fully cool on a baking rack. Once cooled, place in a zip top bag or in an airtight container. Store at room temperature for 3-4 days.

To freeze, allow cookies to fully cool. Place in a freezer safe bag or container and freeze for up to two months. To thaw, pull cookies out of freezer and allow to thaw at room temperature.

Tips for making cookies

  • Use softened butter
  • Make certain oven is preheated
  • Bake one tray of cookies at a time
  • Allow cookies to cool for 1-2 minutes on baking sheet, then remove from baking sheet and continue cooling on baking rack

Ingredients
  

Cookie Dough

  • 1 cup butter
  • 1 ½ cups sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 2 ¾ cups flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground cardamon
  • ¼ teaspoon ground cloves

Spiced Sugar

  • ½ cup sugar
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground cardamon
  • ¼ teaspoon ground cloves

Instructions
 

Cookie Dough

  • Preheat oven to 375 degrees
  • Line baking sheets with silicone baking mat, parchment paper or lightly spray pan with a nonstick spray.
  • In a mixing bowl add softened butter and sugar until light and fluffy

  • Mix in eggs and vanilla
    2 eggs, 1 teaspoon vanilla
  • In a separate bowl, combine flour, baking soda, salt and spices
    2 ¾ cups flour, 1 teaspoon baking soda, ¼ teaspoon salt, ¼ teaspoon ground cinnamon, ¼ teaspoon ground cardamon, ¼ teaspoon ground cloves
  • Slowly add flour mixture to butter mixture

Assemble Cookies

  • In a small bowl combine remaining sugar and spices
  • Use a small cookies scoop (1 tablespoon size) or a spoon and form cookies into a round cookies
  • Place cookies in sugar mixture and roll around so cookie ball is coated with sugar
    ½ cup sugar, ¼ teaspoon ground cardamon, ¼ teaspoon ground cloves, ¼ teaspoon ground cinnamon
  • Place on prepared baking sheets
  • Bake in preheated oven for 10-12 minutes.
  • Cool on a baking rack

    I've been on a huge cardamom kick here lately. I've even started including it as a 'staple' spice in my muffin and coffee cake streusel. It's a bit unexpected, but the flavor is excellent. I know these cookies wouldn't be safe here! Brew up a nice cup of coffee and grab a couple cookies? Now there's a snack! Hope you're doing well, Kathy! Schools are closed for the year here, and that made me think about you. I'm sure these times are super crazy for you. Hang in there, my friend!
