Delicious sweet rolls with fresh strawberries

There’s nothing quite like homemade sweet rolls—especially when they’re filled with juicy, fresh strawberries. These strawberry rolls are a fun and rewarding bake, and they’re always a hit with family and friends. Here’s why you’ll want to make a batch in your own kitchen:

    • Fresh Flavor: Fresh strawberries and a touch of strawberry jam bring big flavor to these rolls. The berries bake right into the dough, giving each bite a burst of bright, juicy goodness.
    • Made from Scratch: I love knowing exactly what goes into my baked goods, and these rolls are made with simple, everyday ingredients. You can adjust the sweetness or tweak the flavors to make them just right for you.
    • Perfect Anytime: These rolls are great for breakfast, brunch, or even as a dessert. They freeze well, so you can always have a sweet treat ready when you need it.
    • Sure to Impress: Whether you’re sharing them with your family or serving them at a gathering, these strawberry rolls are the kind of treat that makes everday feel extra special.

    Key ingredients

    Ingredients in small bowls.
    • Strawberries - Use fresh strawberries for this recipe. Chop into small pieces.
    • Strawberry Jam - The jam adds extra flavor. I used a seedless strawberry jam, but a regular seeded jam is fine too. Homemade strawberry jam can be used too.
    • Flour - Use all-purpose flour
    • Yeast - I use active dry yeast
    • Butter - This recipe uses melted salted butter
    • Milk - The milk makes a lovely soft dough. Use whole milk or 2% milk.
    • Eggs - Eggs create a rich dough perfect for rolling into filled rolls

    Recipe tips

    • The sugar sprinkled on the strawberries is optional, depending on how sweet your berries are. Do not sprinkle the sugar on before being ready to roll up the dough because the berries will begin releasing their juices.
    • Once your dough is topped with the filling, roll it up right away
    • Slice off one end of the jelly roll and discard. Then begin slicing into 2 inch pieces using a sharp chef's knife.
    • Place sweet rolls in the pan as soon as each piece is sliced. They are filled with berries and can become a bit messy.
    • Drizzle icing over rolls while still warm

    Equipment

    • Measuring Cups
    • Stand Mixer
    • Rolling Pin
    • Cooling Rack

    Ingredients

    Dough

    • ½ cup milk (warmed)
    • 2¼ teaspoons yeast
    • 1 tablespoon sugar
    • 2 eggs
    • ¼ cup butter (salted butter, melted)
    • ½ teaspoon salt
    • 2½ - 3 cups flour

    Filling

    • ½ cup strawberry jam
    • 1½ cups strawberries (chopped)
    • 1 tablespoons sugar

    Glaze

    • ¾ cup powdered sugar
    • 2 tablespoons milk
    • ½ teaspoon vanilla

    Instructions

    Dough

    • Place milk, yeast and sugar in the bowl of a stand mixer. Stir and then let rest for 5 minutes until bubbly.
½ cup milk, 2¼ teaspoons yeast, 1 tablespoon sugar
    • Stir in eggs, melted butter and 1 cup of flour
      2 eggs, ¼ cup butter, 2½ - 3 cups flour, ½ teaspoon salt
    • Continue adding flour until dough comes together and forms a ball. Knead at a low speed with dough hook for about 5 minutes until dough is soft and pliable. You might need to add a bit more flour if the dough loses its shape.
    • Form dough into a ball and place in a lightly greased container. Cover and let rise for about 1 ½ hours until it has doubled in size.
    • Gently deflate dough and roll into a rectangle about 10 x 14 inches in size

    Filling

    • Spread jam over the top of the dough leaving about ¼ inch from the border uncovered
      ½ cup strawberry jam
    • Sprinkle with sliced strawberries and lightly sprinkle with sugar
1½ cups strawberries, 1 tablespoons sugar
    • Roll up jelly roll style along the long side. Once rolled, pinch the edge to the roll to hold its shape. Pinch each end to seal the roll.
    • Cut roll into 2 inch pieces and place in a greased baking dish. I used a large 9 inch deep dish pie plate. You can also use a 8 x 11 casserole dish.
    • Cover and let rise for about 30-45 minutes
    • Preheat oven to 375°F and then bake roll for 20-25 minutes until the dough is baked through
    • Place baking dish on a cooling rack and keep rolls in the dish

    Icing

    • When rolls are still just slightly warm, make the icing. Combine powdered sugar, vanilla and milk together in a bowl. Stir until smooth.
¾ cup powdered sugar, 2 tablespoons milk, ½ teaspoon vanilla
    • Pour over the top of the sweet rolls
    • Serve while still warm or at room temperature

    Notes

    • The sugar sprinkled on the strawberries is optional, depending on how sweet your berries are. Do not sprinkle the sugar on before being ready to roll up the dough because the berries will begin releasing their juices.
    • Once your dough is topped with the filling, roll up right away
    • Slice off one end of the jelly roll and discard. Then begin slicing into 2 inch pieces using a sharp chef's knife.
