Quick drop biscuits that are light and tender with bits of ham and cheese baked right inside! This is an easy to make biscuit ready to eat in just 30 minutes and there's no rolling out the dough.

Perfect for a grab and go breakfast or lunch!

Why make these biscuits

These easy to make drop biscuits can be ready in just 30 minutes. You don't need to roll out the dough or use a biscuit cutter.

Once the dough is made, you use an ice cream scoop to drop mounds of dough onto a cookie sheet! It really couldn't be any easier!

Ham and Cheese Biscuits are perfect for breakfast or lunch! How often does that happen? I originally made these biscuits for breakfast and they were perfect along with a couple of eggs.

They'd be just as delicious alongside a bowl of Broccoli Soup or Enchilada Soup.

Or maybe into a mini sandwich - filled with slices of deli ham and cheddar cheese! A ham and cheese sandwich on a ham and cheese biscuit!

I think these would also be delicious for a picnic lunch along with fresh fruit, chunks of cheese and strawberry jam!

Key ingredients

Small bowls filled with butter, ham, cheese and flour.
  • Flour - all purpose flour
  • Butter - salted butter cut into small pieces
  • Sour cream - regular sour cream works best (not light or reduced fat)
  • Cheese - shredded cheddar
  • Ham - cut into small cubes. Use leftover ham or ham from the deli

Step by step directions

  • In a large bowl, combine flour, baking powder, sugar and salt.
  • Add butter and mix into flour mixture using a pastry blender or your fingers. Mixture should be crumbly looking.

  • In a separate bowl, mix sour cream and milk together. Add to flour mixture. Stir just until combined. The mixture should be sticky.

  • Use an large scoop or a large spoon and place mounds of dough on a greased baking sheet.

  • Bake in a preheated 450 degree oven for 15 minutes or until golden. 
  • Cool on a baking rack.

Biscuit variations

  • Omit ham if desired
  • Substitute ham for finely chopped salami or pepperoni
  • Use your favorite type of cheese - pepper jack, colby, gouda
  • Add finely chopped green onions
  • Sprinkle a bit of shredded parmesan cheese on the top of each biscuit before baking

Biscuit baking tips

  • Use cold butter
  • Stir dough just until mixed
  • Handle dough as little as possible - overworking can cause the biscuits to become tough
  • Make certain oven is fully preheated
  • Store cooled biscuits in the refrigerator

Recipe FAQs

How long will these biscuits last?

The biscuits will last for 3-4 days. Be certain to store biscuits in an airtight container in the refrigerator.

Can I freeze the biscuits?

Yes, these biscuits can be frozen once fully cooked and cooled. Place in a single layer freezer bag. Freeze for up to 30 days.

To use, simply remove from freezer and allow to thaw at room temperature or in the refrigerator.

Ingredients
  

  • 2 cups flour
  • 1 Tablespoon baking powder
  • 1 teaspoon sugar
  • ½ teaspoon salt
  • 5 Tablespoons butter (cut into small pieces, salted butter)
  • 1 cup sour cream
  • ⅔ cup milk
  • 1 cup ham (diced small)
  • 1 cup cheddar cheese (grated)

Instructions
 

  • Preheat oven to 450 degrees.
  • In a large bowl, combine flour, baking powder, sugar and salt.

  • Add butter and incorporate into flour mixture using a pastry blender or your fingers. Mixture should be crumbly looking. 
    5 Tablespoons butter
  • Mix in ham and cheddar cheese.
    1 cup ham, 1 cup cheddar cheese
  • In a separate bowl, combine sour cream and milk together. Add to flour mixture. Stir just until combined. The mixture should be sticky.
    1 cup sour cream, ⅔ cup milk
  • Use an ice cream scoop or a large spoon and place mounds of dough on a greased baking sheet.
  • Bake in a preheated 450 degree oven for 15 minutes or until golden.

      Hi Alice,
      No, but the biscuits won't be quite the same. I have only made the biscuits as written. You could try substituting buttermilk, but you'll need to use less than the amount of sour cream.

    This is so simple and very moist recipe. My boys gobbled these up as a snack. I'm trying to use up a lot of leftover ham. Next time I might add jalapenos for myself. Thanks for the recipe!

    I love a good drop biscuit! I don't mind rolling out dough and doing the whole nine yards thing...but drop biscuits are just a thing of beauty. The way the little bits get nice and crispy on top? Oh yeah! I love the ham and cheese version here, Kathy! And I must admit that I'm still laughing at the 'A ham and cheese sandwich on a ham and cheese biscuit!' comment. You're right though...those would be delicious! 🙂
