Crostini with Goat Cheese and Caramelized Onions….I am so hoping to have this delicious appetizer this weekend!  I want to sit on my deck with a nice cool breeze blowing and have my children bring me a tray full of these crostini along with a glass of wine!  Sounds perfect doesn’t it?  I don’t want to cook dinner, do the dishes, or clean the house!

Grilled toast topped with a spreadable cheese and caramelized onions. I made these a few weeks ago and want to have them again. These crostini are topped with caramelized onions.  The caramelized onions are not fast to make.  They aren’t something you can just quickly whip up….however, you can make them ahead of time!  You can even freeze the extras and pull them out when you want to be pampered and feast on a spectacular appetizer.  A little pre-planning really pays off on a day when you don’t want to do anything!

A white serving plate with crostini and grapes.

Use a good crusty loaf of french bread.  Rub it with olive oil and throw it on  the grill.  You do need to keep a close eye on the bread.  It will burn quickly.    The rest is easy.  Spread on goat cheese and top with your pre-made caramelized onions.  Then just sit back and enjoy!  And hope your children can fend for themselves and will clean the kitchen!  Ahhhhh….well, a girl can dream, can’t she?

I love Crostini. And this one with goat cheese sounds amazing, Kathy. And caramelized onions on top is just beyond YUM! I wish I could have at least 3-4 crostini right now. 🙂

I love the idea of gobbling down these crostini outside, but why can’t I envision my children delivering them on a tray? Ohhhhh. I think I know why. Anything with caramelized onions wins my heart, every time. They always get eaten no matter how much I make! Go figure.
