These baked Dry Rubbed Wings are full of flavor! They are cooked entirely in the oven and have wonderful crisp skin.

Serve as an appetizer or as a main dish!

Baked dry rubbed chicken wings

Baked wings are the way to go! At least that's true in my book. With baked wings, you still get all the same flavor as those deep-fried ones, without all the mess or all that extra oil.

These baked wings are given a quick rub with various herbs and seasoning and a touch of brown sugar ( just two teaspoons!) Then they're baked until golden brown and crispy.

Serve up a batch of these wings as an appetizer. They are perfect for watching football! Or serve these wings for dinner as the main dish.

These wings are an amped-up version of salt and pepper wings! They are very similar but this dry rubbed wings have a whole lot more seasoning!

  • Chicken Wings - I use party wings, which are already separated into little drumettes and flats. If you have full-size wings, you can separate them into two pieces or just use the whole wing.
  • Olive Oil - The wings benefit from a very light coating of oil. Use olive oil or your favorite type of oil. The oil helps crisp the skin and helps the seasoning stick to the wings.
  • Seasoning - A medley of seasoning is used for the rub: Garlic powder, onion powder, smoked paprika, chili powder, dried thyme, dried parsley and salt and pepper. You can use regular paprika and if you want a spicier wing, just add more chili powder!
  • Brown Sugar - The brown sugar adds just a touch of sweetness to the wings and helps balance the spices.

  • Pat the wings dry with a paper towel.
  • Drizzle over oil and toss to coat.
  • Combine seasoning with brown sugar in a small bowl. Sprinkle over wings. Use your hands to rub the seasoning over all areas of the wings.
  • Place on a baking sheet lined with parchment paper.

  • Bake in a preheated 400°F oven for 40-45 minutes until the wings are crispy and cooked through.
  • Serve with a sprinkle of freshly chopped parsley for a garnish.

  • Use parchment paper or a silicone liner to help prevent the chicken from sticking to the cookie sheet and to make cleanup easier.
  • Your hands are the best tool to rub the seasoning mixture on the wings.
  • Chicken is fully cooked when it reaches an internal temperature of 165°F.
  • Leftover wings can be stored in a covered container in the refrigerator for 3-4 days.
  • If you prefer a spicier wing, add additional chili powder.

Yes, if you don't want to cut your wings into drummettes and flats, you can leave them whole. The baking time may need to be adjusted.

Do I need to use brown sugar in dry rubbed wings?

No, you can omit the brown sugar or reduce to one teaspoon if you prefer. The brown sugar offers a bit of sweetness to compliment the spices.

  • 1½ - 2 pounds chicken wings
  • 1 tablespoon olive oil
  • 2 teaspoons brown sugar
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon dried thyme
  • ¼ teaspoon dried parsley
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions
 

  • Preheat oven to 400°F
