This Puff Pastry Tomato Tart makes a perfect appetizer full of flavor. Made with puff pastry, garlic and herb cheese spread, and fresh tomatoes.
Puff pastry tart
Puff pastry is so versatile and elevates just about everything. This tomato tart is really quite simple, but so elegant and delicious.
It makes a perfect appetizer or even a light dinner.
I've used my own quick puff pastry for the crust, but any puff pastry will work, including store-bought.

- Tomatoes - Fresh tomatoes really are the star of the show so pick beautifully ripened tomatoes. Pick freshly picked tomatoes, if available. You can select a variety of sizes, varieties, and colors.
- Cheese Spread - I've used a homemade garlic cheese spread similar to Boursin. You could also use a garlic herb cream cheese.
- Puff Pastry - Make your own puff pastry or buy from the store.
- Parmesan - Freshly grated parmesan is grated over the top and adds extra flavor.
- Herbs - I've used fresh thyme, oregano and basil.
Step-by-step directions

- Slice tomatoes into ¼ inch slices and place slices on a paper towel in a single layer.
- Roll out puff pastry into a 10x10 inch square.
- Trim edges about ¼ of an inch so the edges are straight.
- Brush edges with egg wash and place cut edges on top. This will become the sides of the tart.
- Spread softened herbed cheese over the puff pastry, avoiding the edges.
- Pat the top of the sliced tomatoes with a paper towel to remove any excess moisture.
- Place tomatoes on tart, without overlapping.
- Brush top of puff pastry with egg wash.
- Sprinkle with fresh herbs, salt and parmesan cheese.
- Bake in a preheated 400°F oven for 25-30 minutes until the pastry is golden brown.
- Allow puff pastry to cool for 5-10 minutes before slicing and serving.
- Serve warm or at room temperature.

Ingredients
- 1-2 tomatoes (fresh)
- 1 sheet puff pastry (If using homemade, use half a batch)
- ¼ cup Boursin cheese spread
- 2 sprigs fresh thyme
- 2 sprigs fresh marjoram (optional)
- 2 tablespoons Parmesan cheese (grated)
- 2 leaves fresh basil
- pinch coarse salt

- 1 egg
- 1 tablespoon water
