Pineapple Salsa

This pineapple salsa is perfect over grilled fish, chicken or as a dip with tortilla chip!

If you haven't ever had a fruit salsa, you are in for a treat! It is so fresh tasting and delicious.

When I was making this salsa, the kids kept asking, "Where are the tomatoes?" Most salsas do have tomatoes, but not this one! This salsa only has 5 ingredients - but no tomatoes!

One of my favorite ways to eat this salsa is with grilled fish or chicken, but we've also served it with tacos. Sometimes I eat it by the spoonful!

Go grab yourself a fresh pineapple and throw together this quick and delicious pineapple salsa.

Ingredients
  

  • 1 ripe pineapple (diced)
  • ½ red onion (finely diced)
  • 1 whole jalapeno (finely minced)
  • ½ cup fresh cilantro (chopped)
  • 1 Fresh lime squeezed

Instructions
 

  • Put all ingredients into a bowl.
  • Mix lightly.
  • Cover and chill.

Notes

Best if made at least 1 hour before serving.
Best eaten within 2 days.

    I had only traditional tomato salsa in mind. This sounds interesting. Pineapple salsa can go well with Indian roti and steamed rice for our traditional sadya

    I love fruit salsa! The eye popping color and the swirling taste. Sometimes I make my own, sometimes we buy from the Amish who whip is up pretty cheaply out in the country, but I'm trying this!!

    Pineapples are on sale at our local grocery store right now...and I'm thinking a big batch of this salsa might need to happen. I've always been partial to 'traditional' salsa, but I do love pineapples! Oh, I wonder if we could grill that pineapple and then add it to this salsa? Yum!
