The cold winter weather makes me want to bake. I bake breads, desserts, and dinner! I made a Chicken Broccoli and Rice Dish.  I think I like to have the oven going because it just provides another source of heat! Chicken Broccoli and Rice Bake

Plus you just can’t beat a warm, hearty meal when it’s cold and snowy outside. I made a double batch of this chicken, broccoli and rice bake and threw one in the oven for dinner and the other in the freezer for later. Two meals without any extra work!

I usually make this on a weekend and get everything together in the morning and then pop it in the refrigerator.  At dinner time I pop it in the oven and dinner feels like a ready made meal!

Ingredients
  • 3 cups cooked rice
  • 1/4 cup butter
  • 1/4 cup flour
  • 1 cup chicken broth
  • 1 1/2 cups milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 Tablespoon Sherry
  • 1/4 cup Parmesan cheese shredded
  • 3 cups cooked chicken chopped
  • 1 1/2 cups steamed broccoli chopped
Topping
  • 1/4 cup Parmesan cheese shredded
Instructions
  1. Melt butter in a large pan.

  2. Stir in flour and cook for 1-2 minutes.

  3. Stir in chicken broth and milk.  Simmer over low heat until mixture begins to thicken.

  4. Stir in salt, pepper and sherry

  5. Stir in Parmesan cheese.

  6. Add chicken and broccoli. 

  7. Spray a baking dish with nonstick cooking spray.

  8. Add a small amount of chicken mixture to bottom of dish.

  9. Add rice and then top with remaining chicken mixture.

  10. Sprinkle with remaining Parmesan cheese

  11. Bake uncovered in a 350 degree oven for 30 minutes or until bubbly. 

Recipe Notes

Add additional salt and pepper to taste. 

Recipe can be doubled.

To freeze,  let mixture cool, cover with foil, label and freeze.  To reheat, pull from freezer at least 6 hours before baking so it can partially thaw. It is okay to bake partially frozen. Bake at 350 for at 60 minutes or until bubbly throughout.
