If you're looking for a fast and easy dish that's packed with flavor, this Blackened Walleye is for you. I've used walleye in this recipe, but really almost any white fish fillet will work. Use whatever you have on hand.
Blackening refers to a spice rub that is generously applied to fish or meat. It is then cooked over a high heat giving it a slightly blackened appearance.
I like to make my own blackening seasoning, but any type of blackening spice mix works for this recipe. One great thing about making your own is you can adjust the spice level up or down to your liking.

- Rub a generous amount of blackening seasoning over both sides of fillets
- Heat pan over medium-high heat. Add enough oil to just coat the bottom of the pan.
- Add fish and cook for 2-3 minutes per side, flipping fish once
- Once filets are cooked through, remove from pan and serve hot
- Garnish with freshly chopped parsley and serve with lemon wedges
