Roasted Red Bell Pepper Hummus

This roasted red bell pepper hummus gets its flavor from the roasted bell peppers and garlic. A tasty hummus that can be whipped together in less than 10 minutes.

Serve with fresh cut veggies, chips or pita bread.

Why make this hummus

Making hummus at home is not difficult. A food processor does all the hard work. All you do is add the ingredients and taste test it!

Hummus is perfect for pulling out for a quick healthy snack or for packing into your lunch box for a quick pick-me-up.

When my kids were younger, I love putting out hummus with fresh cut veggies for a mid-afternoon snack. They'd gobble it up in no time at all. They felt good with a delicious snack and I felt good about feed them something good for them!

My kids are grown up now, but they still gobble up hummus and veggies whenever I have it available and I still feel good about them eating it!

Key ingredients

Small bowls filled with ingredients for making hummus.
  • Chickpeas - also known as garbanzo beans. Use canned, drained and rinsed or make your own.
  • Roasted red bell peppers - buy a jar at the store or roast your own.
  • Tahini
  • Garlic
  • Lemon juice - use fresh squeezed for the best taste
  • Olive oil

Step by step directions

  • Place chickpeas, bell peppers, tahini, garlic and lemon juice in a food processor
  • Pulse until smooth
  • Chickpeas, bell peppers and tahini in a food processor bowl.
  • Pureed pepper mixture in a food processor.
  • With mixer running, drizzle in olive oil until hummus reaches desired consistency
  • Add salt and stir
  • Top with additional chopped bell peppers for garnish (if desired)
  • Olive oil being poured into a food processor.
  • Hummus in a bowl with a spoon.

Tips for making hummus

  • If using canned beans, be certain to fully drain and rinse
  • When using jarred roasted bell peppers, remove excess liquid by patting peppers dry
  • Amount of olive oil added will vary depending on how creamy and thick you like your hummus. Start with 1 tablespoon then stop to taste test. Add an additional 1-2 if needed
  • Save 1-2 tablespoons of chopped roasted bell peppers for a garnish

Ingredients
  

  • 15 oz can chickpeas (garbanzo beans) (rinsed and drained)
  • 2 cloves garlic (minced)
  • ¼ cup tahini
  • 1 cup roasted red bell peppers
  • 2 Tablespoons lemon juice (fresh squeezed)
  • 2-3 Tablespoons olive oil
  • ¼ teaspoon salt

Instructions
 

  • Place chickpeas, bell peppers, garlic, tahini and lemon juice in a food processor.
  • Pulse until combined
  • Add 2-3 tablespoons of olive oil with food process running, until desired consistency is reached.
  • Add salt and stir to combine

Notes

    Oh man, I love a good hummus! Roasted red pepper is one of my favorite flavors, too. In fact, one of my favorite lunches is just a slice of whole grain bread (especially one of those kinds with all of the seeds/grains in it) topped with roasted red pepper hummus. Can't wait to try this one soon! 🙂

    Don't know if you have a Wegmans grocery store near you but they make a red pepper hummus very much like this. The problem. Super pricey!!!! I'll have to try your spin.
