    No Bake Berry Delight

    This no bake berry delight is a fun summer dessert made with whipped cream, fresh berries, vanilla wafers and marshmallows! Super easy to make and a perfect summertime treat.

    This tasty dessert can be whipped up in just 10 minutes and then all you need to do is refrigerate until serving time.

    Why make this dessert

    There's nothing better during the hot summer days than having a no bake dessert filled with fresh berries. The last thing I want to do is turn the oven on and heat up the house.

    This no bake delight makes it possible to still have a delicious dessert.

    No Bake Delight

    There are a lot of variations of no bake delights. Mine originated from a recipe my mom has always made. Her recipe used canned cherry pie filling and graham crackers.

    In this version, I've used fresh berries and crushed vanilla wafers. I also have a raspberry delight recipe that's just as delicious.

    To assemble

    • Crush vanilla wafers in a food processor or place in a plastic bag and crush with a rolling pin
    • Place all but one cup of the crushed cookies on the bottom of an ungreased 9 x 11" casserole dish
    • Whip cream with sugar and vanilla until soft peaks are formed. Stir in mini marshmallows.
    • Crushed vanilla wafers in the bottom of a glass dish.
    • Mini marshmallows in a bowl full of whipped cream.
    • Spread half of the whipped cream mixture over crust
    • Place half the blueberries and strawberries on top of whipped cream
    • Whipped cream spread over top a cookie crust.
    • Blueberries and strawberries in a glass casserole dish.
    • Add the remaining whip cream
    • Sprinkle with the reserved one cup of crushed vanilla wafers
    • Add remaining fruit
    • Cover and refrigerate for at least 1 hour
    • Cookie crumbs added to the top of a no bake dessert.

    Variations and Substitutions

    This recipe allows for a lot of variations or substitutions.

    • Use graham cracker in place of vanilla wafers
    • Instead of whipping heavy cream, use purchased whipped cream (Cool Whip)
    • Add your favorite berry
    • Omit the mini marshmallows
    • Drizzle the top with chocolate sauce
    • Add mini chocolate chips to the whipped cream layer

    Get the kids to help

    This is a great dessert to have the kids help assemble! Let them help crush the vanilla wafers. Just place the wafers in a zip top bag and give them a rolling pin. They can also help with folding the marshmallows into the whipped cream and adding the berries to the dessert.

    Ingredients
      

    • 1 box vanilla wafers (11 ounce box)
    • 2 cups heavy whipping cream
    • ½ teaspoon vanilla
    • 3 tablespoons granulated sugar
    • 2 cups mini marshmallows
    • 2 cups fresh blueberries
    • 2 cups fresh strawberries (sliced)

    Instructions
     

    • Crush vanilla wafers in a food processor or in a plastic bag with a rolling pin
      1 box vanilla wafers
    • Reserve one cup of crushed vanilla wafers. Add remaining to the bottom of an ungreased 9 x 11" casserole dish. Push crumbs down with hands or the bottom of a measuring cup.
    • In a bowl, whip cream to soft peaks, Add vanilla and sugar and stir to combine
      2 cups heavy whipping cream, ½ teaspoon vanilla, 3 tablespoons granulated sugar
    • Fold mini marshmallows into whipping cream
      2 cups mini marshmallows
    • Spread half of the whipped cream mixture over crushed cookie crumbs
    • Add half the blueberries and strawberries over the whipped cream
      2 cups fresh blueberries, 2 cups fresh strawberries
    • Add remaining whipped cream mixture
    • Sprinkle reserved cup of cookie crumbs on top of whipped cream
    • Add remaining berries
    • Cover and refrigerate for at least one hour

      Ah! This dessert is perfect for 4th of July and summer picnics. It's colorful and packed with fresh berries! I would be all about a bowl of this one at the end of a hot day. And speaking of hot, our days have been REALLY hot here lately - I think that's a good excuse to make this Berry Delight for dessert tonight. 🙂
