Savory Monkey Bread from Scratch

Cheesy garlic pull apart bread is stuffed with mozzarella cheese and dipped into an herb garlic butter. Each bite is filled with pure deliciousness.

Oh my goodness! This bread is everything you've ever dreamed of.

Well, it's everything you've ever dreamed of if you dream of all things garlic and cheese! Just imagine - soft pillowy bread filled with mozzarella cheese in each pull apart piece.

To make it even better, each round is dipped in garlic butter and then sprinkled with Parmesan cheese!

I told you, everything you've ever dreamed about! And if you didn't dream about it before, you will now!

This savory monkey bread is so full of flavor and is loaded with cheese!

Pull apart bread is also call monkey bread. It is created by taking bread dough and rolling it into small rounds and then layering the rounds in a bundt pan. 

Step by step directions

  • Start by making homemade bread dough and let rise until doubled
  • Divide the dough into 32 pieces. Form each piece into a rough ball.

  • Add a small piece of cheese

  1. Fold up dough around cheese, sealing all seams of dough

  • Roll each sealed piece of dough into melted garlic butter

  • Layer each piece of dough into a greased bundt pan

  • Sprinkle each layer with Parmesan cheese

  • Allow bread to rise
  • Bake in a preheated 375° oven

  • Let bread cool for 10 minutes, invert bundt pan to remove bread

Recipe tips

  • Water should be between 105-110° in order to activate yeast
  • Rise time will vary depending on temperature in your kitchen
  • Be certain oven is fully preheated prior to baking

Serving suggestions

I like to serve as an appetizer with warmed marinara sauce or as a side dish along with a  Caesar salad and baked chicken pasta.

Recipe FAQs

Can I make ahead of time?

Yes, you can make this ahead of time. But I think  it's best still warm out of the oven. This bread is still delicious the next day served at room temperature. 

Can I use prepared bread dough?

If you are short on time, you can use prepared bread dough. You can purchase frozen bread dough at the store or pizza dough can sometimes be purchased in the deli section or from your favorite pizza place.

Ingredients
  

Dough

  • 1 ½ cups warm water
  • 2 ¼ teaspoons yeast (active dry)
  • 1 Tablespoon honey
  • ¼ cup olive oil
  • ½ teaspoon salt
  • 3 ½ - 4 cups flour (all purpose)

Filling and Assembly

  • 4 ounces mozzarella cheese (cut into ½" cubes)
  • ½ cup butter
  • 2 cloves garlic (minced)
  • ¼ cup Parmesan cheese (shredded)
  • 1 teaspoon Italian seasoning

Instructions
 

Dough

  • Measure water into mixing bowl and sprinkle yeast over water. Add honey and stir. Let rest for 10 minutes until mixture becomes bubbly.
    1 ½ cups warm water, 2 ¼ teaspoons yeast, 1 Tablespoon honey
  • Add Olive Oil, Salt, and one Cup of Flour. Mix until incorporated
    ¼ cup olive oil, ½ teaspoon salt, 3 ½ - 4 cups flour
  • Continue adding flour 1 Cup at a time. You might not add all the flour. With the last cup begin adding ¼ cup at a time.
  • Knead for 10 minutes
  • Move dough to a large bowl that has been lightly covered with olive oil. Cover with plastic wrap.
  • Let rise until doubled
  • Punch down down gently.

Filling and Assembly

  • Melt butter in a small sauce pan. Add minced garlic and Italian seasonings. Let simmer 1-2 minutes on a very low heat. Remove from heat and set aside.
    ½ cup butter, 2 cloves garlic, 1 teaspoon Italian seasoning

    4 ounces mozzarella cheese
  • Fold up dough around cheese, sealing all seams of dough

    ¼ cup Parmesan cheese
  • Allow bread to rise
  • Bake in a preheated 375 degree oven for 35-40 minutes
  • Allow to cool for 10 minutes, invert bundt pan to remove bread

    I just love the presentation of this one, Kathy! We're still not over the tremendous amount of snow we had over a week ago so all sorts of comfort food is in order. I bet these are so good with a big bowl of hot soup!

    This sounds fan-freakin-tastic, Kathy! Pull-apart bread is right up my alley because (1) bread (2) garlic (3) cheese. 🙂 This looks like the perfect appetizer for the Super Bowl...I don't care much about the actual game this year, but I do care about the snack table!
