Butterscotch Brownies

I often test new recipes in my kitchen and whenever I have a great one, I can't wait to share it with you! These Butterscotch Brownies are easy to make and are perfect for when you're looking for something a bit different.

Easy butterscotch bars

Butterscotch bars or butterscotch brownies (either name works) are a delicious and easy-to-make treat. Everything is mixed together in just one bowl and then baked in a pan. Once the bars are cooled, slice into any size you'd like.

These bars are perfect served for dessert, but they also pack up nicely for a road trip or picnic. I brought several bars camping with us and they were such a delicious treat. They'd also be great for packing for school (or work) lunches!

The rich butterscotch flavor and chewy texture make these bars irresistible, and they are sure to become a family favorite. Try them out and watch them disappear!

Ingredients for butterscotch brownies

Ingredients for making butterscotch bars.
  • Butterscotch Chips - Find in the baking aisle next to chocolate chips. In a pinch, if all you had were chocolate chips, those would work too.
  • Butter - Use room-temperature salted butter.
  • Brown Sugar - The deep molasses flavor of brown sugar helps add to the butterscotch flavor.
  • Eggs - It's helpful if the eggs are at room temperature. Try to pull out of the fridge about 20-30 minutes before you begin.
  • Pecans - Add great flavor and texture. You can also use walnuts or omit them altogether.
  • Vanilla - Use real vanilla, not imitation

How to make butterscotch bars

  1. Preheat your oven to 350° F.
  2. Spray or line a 9 x 13" baking pan with parchment paper.
  3. In a mixing bowl, beat butter until soft and creamy, 2-3 minutes.
  4. Add brown sugar and mix well.
  5. Add vanilla.
  6. Stir in eggs one at a time, mixing well after each egg.
  7. Add flour to bowl and sprinkle baking powder and salt over the top of the flour. Mix well.
  8. Measure out one cup of butterscotch chips and set aside. Add remaining butterscotch chips and chopped pecans the the mixing bowl.. Use a large silicone spatula or spoon to fold everything together.

  1. Place in pan and spread so the batter is evenly distributed.
  2. Sprinkle with the butterscotch chips you set aside.
  3. Bake in preheated 350°F oven for 30-35 minutes until golden brown.
  4. Remove from oven and let cool before slicing.

Butterscotch bars recipe tips

  • Lining the pan with parchment paper is optional. If not using parchment, spray your pan with nonstick spray.
  • Make certain your butter is softened.
  • Fold in the chips and pecans with a large spoon or spatula.
  • Place reserved butterscotch chips on top of the dough. You could also add a few chocolate chips as well.
  • Bars are best sliced after they have cooled.
  • Place fully cooled bars in an airtight container and store at room temperature for 3-4 days.

Yes, these bars can be frozen. Allow bars to fully cool, then slice into individual pieces. Place in a freezer-safe container and freeze.

  • 1 cup butter (salted, at room temperature)
  • 2 ¼ cups brown sugar
  • 1 tablespoon vanilla
  • 3 eggs
  • 2 ½ cups flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 bag butterscotch chips (11 ounce bag)
  • 1 cup pecans (chopped)

Instructions
