Spice up your meals with this Black Bean and Corn Salad! This refreshing salad has a cilantro lime dressing with a touch of jalapeno!
This Black Bean Corn Salad with Jalapeno Lime Dressing is so easy to make and it is soooooo delicious. It is packed full of veggies and has just a pinch of heat from the jalapenos.
You can adjust the heat to your liking just by adjusting the amount of jalapeno...you could even eliminate it all together, although it does add a great taste.
My son, took third helpings of this at dinner the other night and each time he said, "This is so good!" Even without the words I could tell he loved it. He just kept eating it! The other kids loved it too, but they only had second helpings, not thirds!
One of the great things about this salad is it can be thrown together with items you probably already have on hand. It was super easy to toss everything together and if there were actually any leftovers, it would have made great leftovers!
Note: When handling jalapenos remember that the spicy oils can remain on your hands, even after washing. Try not to rub your eyes or you will instantly feel the burn! Many people use gloves while handling jalapenos or other hot peppers to avoid this.
This southwest black bean salad is a perfect side dish to Beer Can Chicken, BBQ Chicken or Grilled Flank Steak.
This is a perfect recipe for using dried black beans made in an Instant Pot. You could also used canned black beans.

Black Bean Corn Salad with Jalapeno Lime Dressing
Ingredients
- 2 Cups Frozen Corn Kernels
- 1 Can Black Beans (drained and rinsed)
- ½ red bell pepper (chopped)
- 1 bunch green onions (sliced or ½ red onion diced)
- ¼ Cup Mayonnaise
- ¼ Cup Sour Cream
- Lime zest from one lime
- Lime juice from one lime
- 1 Tablespoon minced jalapeno.
- Salt and Pepper to taste
Instructions
- Place corn through green onions in a large bowl.
- In a separate bowl, mix mayonnaise, sour cream, lime zest, lime juice and jalapeno.
- Add salt and pepper to taste.
- Mix dressing into salad bowl.
- Stir gently.
- Serve immediately or chill until ready to serve.
