    Black Bean Burrito Bowls

    These Black Bean Burrito Bowls are perfect for lunch or dinner! No need for a tortilla for this burrito - just layers of chicken, rice, beans, tomatoes and lettuce with a lightly seasoned dressing.

    I have recently fallen in love with burrito bowls! I don't know what it is about them, but they are my new favorite. These Black Bean Burrito Bowls are so delicious.

    Think about all your favorite ingredients served inside a burrito. Take all those yummy ingredients and layer them in a bowl and eat it like a salad!

    What ingredients do I need?

    Maybe it's the fact that they are filled with some of my absolute favorites; grilled chicken or shredded chicken , avocados, cilantro lime rice, and all my favorite toppings. It's like eating a salad topped with your favorite burrito filling. These bowls are super versatile. If you don't like an ingredient, leave it out.

    If you don't have something on hand, just substitute it for something else. Build these bowls the way you love them!

    Use a bit of homemade taco seasoning or fajita seasoning in the homemade dressing!

    What type of chicken do I use?

    For this recipe, I seasoned and grilled a couple of chicken breasts. You could also use leftover rotisserie chicken or substitute your favorite meat. Want a vegetarian meal? Just omit the meat altogether.

    Red onions, tomatoes, and rice in small bowls. I like to put all the ingredients out in little bowls and let everyone make their own burrito bowl. That way they get just what they want. The kids really like building their own and fill it with all their favorites.

    You can use canned black beans or make your own Instant Pot Black Beans.

    Ingredients
     
     

    Chicken

    • 2 boneless, skinless chicken breasts
    • ¼ teaspoon salt
    • ¼ teaspoon pepper
    • ¼ teaspoon garlic powder

    Other Ingredients

    • 1 can black beans (rinsed)
    • ½ teaspoon taco seasoning
    • 2 cups cooked rice
    • 3 cups lettuce (cut into bite sized pieces)
    • ½ cup tomatoes (chopped)
    • ¼ cups red onions (chopped)
    • 1 whole avocado (sliced)
    • 1 cup Queso Fresco (crumbled)

    Dressing

    • 1 cup sour cream or plain yogurt
    • ½ teaspoon taco seasoning
    • juice of ½ lime

    Instructions
     

    Chicken

    • Season chicken and grill. Once cooked, cut into strips

    Beans

    • Rinse and drain beans. Add to a sauce pan with taco seasoning. Heat just until warm. 

    Dressing

    • Combine sour cream, taco seasoning and lime juice together in a bowl. Add salt and pepper to taste.

    Assemble Bowls

    • In individual bowls, place lettuce, beans, and rice. Top with tomatoes, onions, avocado and chicken. Drizzle dressing on top. 

    Notes

    Serve ingredients warm, rather than hot.
    Bowls are versatile. Add your favorite ingredients: guacamole, salsa, corn, jalapenos, bell peppers, sauteed onions. 
    Feel free to use your favorite type of dressing. 
    Queso Fresco is a crumbly Mexican style cheese found in most grocery stores. You can also use shredded cheddar cheese or your favorite type of cheese.

      I love burrito bowls but I don't know why I don't make them often. Love these protein-packed black beans burrito bowls. My husband loves black beans, so would try them for my husband.

      We don't do bowls that often but love the idea that you can have all your favorite ingredients and build something delicious! This burrito bowl looks so appetizing, only no chicken for me, but there are black beans and it is perfect!

      Wow, what a great idea. Aside from the avocado (and I suck at choosing good ones), I have most of the other ingredients. I imagine you could substitute other types of beans as well.

      Yay for black bean burrito bowls, Kathy! I love to add a little grated pepper jack cheese also. This is a Sunday favorite of mine - then I can take the leftovers wrapped up in a burrito for lunch the next day. Delicious!
