Fresh Tomatoes, Cucumbers, Red Onions and Feta come together in a delicious Greek Salad.

Perfect for lunch or served as a side dish for dinner. This salad can be ready in just 10 minutes!

Why make this recipe

A Greek salad is really a fresh veggie salad made with cucumbers, tomatoes, onions along with olives and feta cheese. This is a light, tasty salad that is easy to throw together.

Make for a quick family dinner or bring to a summer potluck dinner.

Key ingredients

Fresh tomatoes, onion, cucumber and other ingredients on a counter.
  • Tomatoes - Use perfectly ripe tomatoes
  • Onion - I use a red onion. You could also use a white onion or a sweet onion
  • Cucumber - Use an English cucumber or a standard slicing cucumber
  • Feta - Crumbled
  • Kalamata Olives - Pitted and halved

Step by step directions

  • Chop veggies
Chopped onions, tomatoes and cucumbers on a wooden board.
  • Add chopped veggies to a large bowl along with olives and feta cheese. Stir lightly to combine.

  • Combine dressing ingredients in a glass jar. Place lid on jar and shake to combine.

  • Pour dressing over veggies and lightly toss to combine

Recipe tips

  • Chop veggies about the same size
  • You can peel the cucumber or leave the peel on
  • Tomato seeds can be scooped out or left in
  • Once salad is assembled, add additional salt and pepper to taste

Kitchen tip

Taming the spiciness of red onions - Sometimes raw onions are very strong tasting and spicy. To reduce this taste, simply cut the onions and then soak in ice water for 15-20 minutes. Drain and then add to your salad.

How long will this salad last?

This salad is best eaten right away. However, if you have any leftovers they will last for up to two days stored in the refrigerator.

Can I make this salad ahead of time?

If you need to make ahead of time, it's best to chop all the veggies and store in separate dishes. Make the dressing and keep in jar. Just before serving, assemble salad.

Serving suggestions?

This salad is perfect eaten as a vegetarian main dish or as a side dish. I often serve it alongside barbecued chicken or pan fried fish fillets.

Ingredients
  

  • 1 cucumber (peeled and chopped)
  • 2 tomatoes (chopped)
  • 1 small red onion (chopped)
  • ⅓ cup Kalamata olives (quartered)
  • ¼ cup feta cheese (crumbled)

Dressing

  • 3 Tablespoons olive oil
  • 2 Tablespoons red wine vinegar
  • ¼ teaspoon dried oregano
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Instructions
 

  • In a large bowl, combine cucumbers, tomatoes, onions, olives and feta.
  • Combine all dressing ingredients together in a separate bowl.
  • Pour dressing over salad. Mix to combine.

    Nice job on the video, Kathy! 🙂 I love a good Greek salad, and I could totally see how this would become a summer staple. I used to always order Greek salads at restaurants with the olives on the side, and then Laura would take all of my olives. But now those olives are mine!
