- Tomatoes - Use perfectly ripe tomatoes
- Onion - I use a red onion. You could also use a white onion or a sweet onion
- Cucumber - Use an English cucumber or a standard slicing cucumber
- Feta - Crumbled
- Kalamata Olives - Pitted and halved

- Chop veggies
- Add chopped veggies to a large bowl along with olives and feta cheese. Stir lightly to combine.
- Combine dressing ingredients in a glass jar. Place lid on jar and shake to combine.
- Pour dressing over veggies and lightly toss to combine

- Tomato seeds can be scooped out or left in
- Once the salad is assembled, add additional salt and pepper to taste
Kitchen tip
Taming the spiciness of red onions - Sometimes raw onions are very strong tasting and spicy. To reduce this taste, simply cut the onions and then soak in ice water for 15-20 minutes. Drain and then add to your salad.

This salad is best eaten right away. However, if you have any leftovers they will last for up to two days stored in the refrigerator.
If you need to make ahead of time, it's best to chop all the veggies and store in separate dishes. Make the dressing and keep in jar. Just before serving, assemble salad.

Ingredients
- 1 cucumber (peeled and chopped)
- 2 tomatoes (chopped)
- 1 small red onion (chopped)
- ⅓ cup Kalamata olives (quartered)
- ¼ cup feta cheese (crumbled)
Dressing
- 3 Tablespoons olive oil
- 2 Tablespoons red wine vinegar
- ¼ teaspoon dried oregano
- ¼ teaspoon salt
- ¼ teaspoon pepper
Instructions
