The easiest fruit salad

Fruit salads are perfect for every meal of the day and can even be eaten as a snack or served as dessert. Yep, you really can serve this for breakfast, lunch, or dinner.

This fruit salad is simple and can be made with a variety of fruit. Use what you have on hand, what's available, or what you prefer.

I have made the simplest dressing that adds just the right amount of sweetness to the fruit. It's so light, that you really don't even know it's there.

This is a great salad to make during the summertime when the berries are in season. It's also perfect to bring to an outdoor BBQ or on a picnic.

The fruit

  • Berries - Strawberries, blueberries, and blackberries. You could also add raspberries.
  • Other Fruit - Kiwi and grapes. You could also add fresh pineapple and bananas.

The dressing

  • Citrus - I used freshly squeezed lemon juice. Other options include lime juice or orange juice or a combination of a couple of the juices.
  • Honey - Honey adds just the right amount of sweetness that enhances the natural sweetness of the fruit.

How to make it

  • Wash and drain your fruit
  • Slice strawberries and kiwi
  • Combine all fruit into a large bowl
  • In a separate bowl, mix freshly squeezed lemon juice and honey. Stir until the honey is fully dissolved. If the honey isn't dissolving, just let it sit for 5-10 minutes and then stir again. Repeat until it is fully dissolved.
  • Just before serving, pour the dressing over the fruit. Toss lightly so all the fruit is combined.

Recipe tips

  • When mixing the honey with the lemon juice, it may take a while for the honey to dissolve. Just let it sit for a bit and stir it every once in a while until it dissolves. The thicker the honey, the longer it will take to dissolve, but it will!
  • Choose your favorite fruits and fruit that are in season.
  • Large grapes can be halved. Smaller grapes can be left whole.
  • Sometimes kiwi have a tougher core. If needed, remove the inner core after you've peeled and quarter it.
  • Add the dressing as close to serving time as possible. The fruit will begin to release its juices once the dressing is added.
  • To prepare ahead of time, combine all the fruit together in a bowl. Cover and refrigerate. Just before serving, add the dressing.
  • If using bananas or raspberries, don't add until the very last minute. With the raspberries, sprinkle a few over the top of the finished salad. Raspberries are so soft that they will easily fall apart if folded into the salad.
  • Store leftovers covered in the refrigerator for 2-3 days.

This salad is best served right away. However, you can have all your fruit cut and in a bowl. Then make the dressing and store it separately. Just before serving add the dressing. If using bananas, or raspberries, add those at the last minute.

When using raspberries, I sprinkle a few over the top of the finished salad. Raspberries are so soft that they will easily fall apart if folded into the salad.

Ingredients
  

Dressing

  • ¼ cup lemon juice (freshly squeezed)
  • 1 tablespoon honey

Fruit

  • 1 pound strawberries (about 2 cups, sliced)
  • 6 ounces blackberries (about 1 ½ cups)
  • 6 ounces blueberries (about 1 ½ cups)
  • 6 ounces grapes (about 1 ½ cups)
  • 3-4 kiwis (about 1 ½ cups)

Instructions
 

Dressing

  • In a small bowl, mix freshly squeezed lemon juice and honey. Stir until the honey is fully dissolved. If the honey isn't dissolving, just let it sit for 5-10 minutes and then stir again. Repeat until it is fully dissolved.
    ¼ cup lemon juice, 1 tablespoon honey

Fruit

  • Rinse fruit and drain off any excess water
  • Slice strawberries and kiwi
  • Combine all fruit into a large bowl
  • Just before serving, pour the dressing over the fruit. Toss lightly so all the fruit is combined.

Notes

    • The fruit measurements are flexible. Add a bit more if you have it or a bit less of anything you'd like.

    Kathy, I made this on Saturday for a barbecue and it was hit! The fruit looked beautiful in my "lettuce" bowl! My sister-in-law asked me to bring a fruit salad and I had just received your email with the recipe...lol.....perfect timing!
