In a small bowl, mix freshly squeezed lemon juice and honey. Stir until the honey is fully dissolved. If the honey isn't dissolving, just let it sit for 5-10 minutes and then stir again. Repeat until it is fully dissolved.
¼ cup lemon juice, 1 tablespoon honey
Fruit
Rinse fruit and drain off any excess water
Slice strawberries and kiwi
Combine all fruit into a large bowl
Just before serving, pour the dressing over the fruit. Toss lightly so all the fruit is combined.
Notes
The fruit measurements are flexible. Add a bit more if you have it or a bit less of anything you'd like.
When mixing the honey with the lemon juice, it may take a while for the honey to dissolve. Just let it sit for a bit and stir it every once in a while until it dissolves. The thicker the honey, the longer it will take to dissolve, but it will!
Choose your favorite fruits and fruit that are in season.
Large grapes can be halved. Smaller grapes can be left whole.
Sometimes kiwi have a tougher core. If needed, remove the inner core after you've peeled and quarter it.
Add the dressing as close to serving time as possible. The fruit will begin to release its juices once the dressing is added.
To prepare ahead of time, combine all the fruit together in a bowl. Cover and refrigerate. Just before serving, add the dressing.
If using bananas or raspberries, don't add until the very last minute. With the raspberries, sprinkle a few over the top of the finished salad and don't fold into the salad. Raspberries are so soft that they will easily fall apart if folded into the salad.
Store leftovers covered in the refrigerator for 2-3 days.
