    It starts with a rich, homemade broth simmered with carrots, celery, onions, and garlic, then adds tender chicken and small pasta for a satisfying, hearty meal.

    Homemade chicken soup

    Homemade chicken soup is all about building flavor from simple ingredients. Starting with a good broth makes all the difference, whether you are using homemade chicken stock or a high-quality store-bought version. A mix of onions, carrots, celery, and garlic creates a flavorful base that simmers gently and fills the kitchen with delicious aromas.

    Adding pasta turns this soup into a hearty, satisfying meal. The pasta cooks right in the broth, soaking up flavor while helping thicken the soup just slightly. Paired with tender pieces of chicken and fresh herbs, this soup is comforting without being heavy and works just as well for a family dinner as it does for leftovers the next day.

    Ingredients
     
     

    • 1 small onion (diced)
    • 3 large carrots (diced)
    • 2 stalks celery (diced)
    • 2 cloves garlic (minced)
    • 1 Tablespoon olive oil
    • 10 cups homemade chicken broth
    • 2 bay leaves
    • 1 cup cooked chicken (chopped or shredded)
    • 1 cup small salad macaroni pasta (uncooked)
    • ½ - 1 teaspoon salt (adjust to your liking)
    • 1 teaspoon pepper

    Instructions
     

    • Heat olive oil in a large pot.
      1 Tablespoon olive oil
    • Add onions, carrots and celery. Saute on medium heat for 3-5 minutes.
      1 small onion, 3 large carrots, 2 stalks celery
    • Add garlic, stir for 30 seconds, just until fragrant.
      2 cloves garlic
    • Add broth and bay leaves. Simmer for 20-30 minutes
      10 cups homemade chicken broth, 2 bay leaves
    • Add pasta. Simmer for 5 minutes..
      1 cup small salad macaroni pasta
    • Add chicken. Simmer for 3-5 minutes until chicken is heated through and pasta is cooked.
      1 cup cooked chicken
    • Add salt and pepper.
      ½ - 1 teaspoon salt, 1 teaspoon pepper
    • Remove bay leaves, serve.

    Notes

    If you use store bought broth, you will not need the full amount of salt. Add to taste.

      I'm getting to this one a bit late, but I couldn't agree more, Kathy! Chicken soup is the perfect way to chase away that ubiquitous winter cold. Talk about the ultimate comfort food...and this one with pasta looks delicious!

      It's been so dreary here lately. this soup looks so warm and comforting, perfect to cheer me up. And I totally agree with you about using homemade stock to control the salt. I really like being in control of that.

      This soup looks just the ticket when you are sick! Shhhh. Don't tell my mom this, but she won't put any carrots in her soup and that's why it'll never be as good as yours. You used the best noodles too. When my husband comes home from school, i make him shower and throw his clothes in the wash so the rest of us don't get sick. Same for my daughter. Germ, bleh.
