Nutella muffins
I am the queen of muffins! Okay, that's a self-appointed title, but I think it's well-deserved! When my kids were growing up, I'd make fresh, homemade muffins 1-2 times a week (sometimes more)! They loved eating muffins and I loved making muffins.
Muffins are incredibly easy to make, coming together in no time. With a baking time of less than 20 minutes, you can have muffins ready to enjoy in under 30 minutes.
I'd often have muffins for breakfast, or as a choice for the kids to pack into their school lunches. They often choose them for after-school treats.
Although my kids are now grown and my muffin baking has slowed down, I’m still experimenting with new muffin ideas. These Nutella Banana Muffins are my latest creation!
Ingredients for Nutella Banana Muffins
- Chocolate Hazelnut Spread - Found usually next to peanut butter. Most commonly known as Nutella, but there are other brands as well.
- Bananas - Make certain they are really ripe. You'll need 3-4 ripe bananas.
- Brown Sugar - The brown sugar adds sweetness, flavoring, and a darker color to the muffins. T
- Milk and Oil - Adds moisture to the muffins and helps develop the crumb. I like to use 2% or whole milk and canola or vegetable oil.
- Eggs - Helps the muffins rise.
- Flavorings - Pure vanilla extract and a bit of ground cinnamon.
- Leavening - Both baking powder and baking soda are used in this recipe.
How to make banana Nutella muffins
- In a large mixing bowl, whisk eggs together until foamy.
- Whisk in brown sugar, oil, milk and vanilla.
- Add flour and sprinkle baking powder, baking soda, salt and cinnamon over the top of the flour. Use a silicone spatula or large wooden spoon to fold the ingredients together. Stir just until the flour is mostly mixed in.
- Add mashed bananas and stir.
- Heat Nutella in the microwave for 10-20 seconds, just until it's runny, but not hot.
- Place ¼ cup Nutella in the center of the batter. Use the tip of the spatula to swirl the Nutella into the batter.
- Scoop batter into paper-lined muffin tins.
- Add about 1 teaspoon of remaining Nutella into the center of each muffin. Use a toothpick to swirl the Nutella into the batter.
- Bake in preheated 375°F oven for 18-20 minutes until baked through.
- Remove muffin tins and allow the muffins to cool for 3-5 minutes before removing from the tins. Continue cooling muffins on a baking rack.
Banana Nutella muffin variations
If you like to mix things up a bit, try these delicious variations:
- Add a cup of chopped hazelnuts.
- Stir in a cup of mini chocolate chips.
- Add orange zest to the batter.
- Sprinkle the top of the muffins with cinnamon sugar or vanilla sugar just before baking.
Nutella muffin tips
- Use fresh baking powder - baking powder can lose effectiveness; if old, your muffins might not rise properly.
- Fully preheat your oven - I use a separate oven thermometer in my oven to make certain my oven has reached the proper temperature. My preheat light often turns off before the oven has reached full temperature so I always give it extra time.
- Do not overmix batter - Just stir until everything is mixed in. Over-stirring can cause tough muffins.
- Swirl the Nutella - Gently swirl the Nutella into the batter with the tip of a knife or a toothpick. Swirling creates a beautiful pattern.
- Use an ice cream scoop - Helps create even-sized muffins. Plus it makes putting the batter in the tins easy peasy!
