Quick apple bread is a delicious moist bread made with shredded apples, cinnamon and a streusel topping. Make this bread for breakfast, brunch or for midday snacking.
Making homemade bread is one of my favorite things to do. It doesn't matter if it's a quick bread, like with this apple bread, a yeast bread, like in my honey oat bread, a sourdough bread, an unleavened bread, like in these homemade pita pockets or a muffin, like these oatmeal banana muffins, I love baking them!
Since it is apple season where I live, this apple bread has made its appearance in my kitchen over the past four weekends. Luckily I've had enough people to share this lovely bread with.
My kids have eaten their fair share of each loaf, but my husband, my nephews and my brother in law each had a slice or two as well. They've all declared it delicious!
What is a quick bread?
A quick bread is a bread that doesn't need to wait for a rise to occur before baking. Quick breads are really a muffin batter that is baked in a loaf pan.
Quick breads get their rise from baking powder and baking soda while the batter cooks in an oven. These breads are quick to whip up, but often do take up to an hour to bake.
What type of apples?
This is an apple bread and apples are a key ingredient. However, you can use any apple you have on hand. I have made this four different times and each time, I have used a different type of apple.
As long as you can peel it and grate the apple, it will work for this bread.
Key Ingredients
- Flour - I used all purpose flour, but you could also use a white wheat flour as well
- Apples - Use any type of apples you have on hand
- Sugar - Granulated sugar is used in the dough and brown sugar on the topping
- Leavening - Both baking powder and baking soda are used in this recipe
- Cinnamon - Ground cinnamon is a perfect accompaniment to apples! It's used in the dough and in the streusel topping. Don't skimp!
- Butter - You just can't go wrong with butter and it's in the batter and in the topping.
How to make apple bread
- Mix dry ingredients together
- In a separate bowl, combine melted butter, granulated sugar, egg and milk together
- Stir in grated apple
- Combine flour mixture into apple mixture
- Pour mixture into a greased loaf pan
- Prepare streusel topping by combining melted butter, flour, brown sugar and cinnamon together
- Drop clumps of topping on top of batter
- Bake in a preheated 350 degree oven for 55-60 minutes
- Allow bread to cool in pan for 10 minutes then carefully remove from pan and continue cooling on a baking rack
- Slice when bread is fully cooled
Tips for making quick breads
- When mixing wet and dry ingredients together, don't overmix. Just stir until combined.
- Be certain your oven is fully preheated
- Allow bread to fully cool before slicing. This is the hardest part! It's very tempting to slice into a loaf while still warm. It will taste delicious, but will often be very crumbly.
- Remove bread after cooling for 10 minutes in pan
- Use a knife around the edge of the pan to release any bread stuck to the sides of the pan.
- Fully cool bread on a baking rack

Ingredients
Bread
- 1 ½ cups grated apples (approximately 3 medium apples)
- ¼ cup butter (melted)
- ¾ cup granulated sugar
- ½ cup milk
- 1 egg
- 2 ¼ cups all purpose flour
- 2 teaspoons ground cinnamon
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
Topping
- ¼ cup butter (melted)
- ½ cup all purpose flour
- ¼ cup brown sugar
- 1 teaspoon ground cinnamon
Instructions
Bread
- Preheat oven to 350 degrees
- Combine butter, sugar, milk and egg together in a bowl¼ cup butter, ¾ cup granulated sugar, ½ cup milk, 1 egg
- Stir in grated apples1 ½ cups grated apples
- In a separate bowl, combine flour, cinnamon, baking powder, baking soda and salt2 ¼ cups all purpose flour, 2 teaspoons ground cinnamon, 2 teaspoons baking powder, ½ teaspoon baking soda, ¼ teaspoon salt
- Add flour mixture to apple mixture. Stir just until combined
- Place batter in a greased 9X5 inch loaf pan
Topping
- Combine melted butter, flour, brown sugar and cinnamon together¼ cup butter, ½ cup all purpose flour, ¼ cup brown sugar, 1 teaspoon ground cinnamon
- Add small clumps of topping directly on top of the prepared batter in bread pan
- Bake in a preheated 350 degree oven for 55-60 minutes
- Allow bread to cool for 10 minutes in pan then remove from pan and continue cooling on a baking rack. Allow bread to fully cool before slicing.

Ah, I love all sorts of homemade breads, too, Kathy! I've used apples in homemade bread, but more of the yeasted types - not quick bread. This sounds delicious, and I'm thinking I need to try a loaf. I bet it would be fun with a maple icing drizzled on top, too!
