Instructions
Preheat your panini grill
Slice the tomatoes and place slices on a paper towel. This helps absorb the excess juices from the tomato which can make a soggy sandwich.
1 tomato
Butter the outside of two slices of bread. Lay them buttered side down.
2 slices sourdough bread,
2 tablespoons butter
Combine the mustard and mayo. Spread on the inside (or the side facing up) of the sandwich.

1 tablespoon mayonnaise
Place slices of turkey on top of the bread, then cheese and then the tomatoes.
4-6 slices deli turkey,
2 slices cheese
Add the other piece of bread on top with the butter side facing out.
Place on panini grill and cook until golden brown and heated through.
Notes
Use any type of deli meat that you'd prefer. This sandwich works well with ham, pastrami or roast beef.
Choose your favorite cheese.
Pat the tomato dry with a paper towel before adding to the sandwich.
To grill on a stovetop grill or cast iron skillet:
Preheat grill or skillet over medium-low heat.
Place sandwich on preheated skillet and cook until the bottom is golden brown.
Flip sandwich and press down with the flipper or spatula to help flatten the sandwich.
Cook until both sides are golden brown and the sandwich is fully heated through. You may need to flip the sandwich a few more times to avoid burning.
