These Roast Beef Sliders are filled with layers of roast beef, provolone cheese, and plenty of horseradish mayo.

Roast beef sliders with provolone cheese are a delicious and satisfying mini sandwich that combines the rich flavors of tender roast beef and creamy provolone cheese. These bite-sized sandwiches are perfect for parties, game nights, or any casual gathering.

The provolone cheese adds a creamy and slightly tangy note that complements the beef beautifully. However, feel free to use your favorite cheese. Cheddar or pepper jack would be delicious too!

These sliders can be customized with additional toppings such as caramelized onions or a touch of spicy mustard to add an extra kick or serve an au jus for dipping.

  • Slider Rolls - These are small-sized rolls. Any type will work. Use regular or Hawaiian-style rolls.
  • Roast Beef - Use thin sliced roast beef.
  • Cheese - I use provolone cheese. Other options include cheddar, pepper jack, Colby, or Swiss.
  • Horseradish Mayo - Made with mayonnaise, horseradish, and Dijon mustard
  • Butter Sauce - Made with regular salted butter, Dijon mustard, Worcestershire sauce, and onion powder.
  • Poppy Seeds - Sprinkled on the top of the buns. You could also use everything bagel seasoning or omit the topping altogether.

  • Prepare horseradish mayo by combining mayonnaise, horseradish, and mustard together in a bowl.
  • Melt butter, mustard, Worcestershire sauce, and onion powder together. Turn off the heat as soon as the butter is melted. Mix to combine.
  • Slice buns in half. If the buns are attached, leave them as one large slab and slice the entire slab in half.
  • Place the bottom half of the buns in an ungreased baking dish.
  • Spread the mayo over both sides of the buns.

  • Place the top half of the buns and then brush on butter over the top and side of the buns. Use all the butter mixture.

  • Bake in a preheated 350°F oven for 20-25 minutes until the sliders are heated through and the cheese is soft and melty.
  • Remove the sliders from the baking dish and separate each slider by slicing between each bun.
  • Serve hot or warm.

Recipe tips

  • The amount of horseradish is flexible. Add more for a spicier sauce or add less for a milder sauce.
  • Keeping the entire slab of rolls intact makes assembly easier. If you prefer, you can detach the rolls and assemble each roll individually.

Ingredients
  

Mayo

  • ¼ cup mayonnaise
  • 1 tablespoon horseradish (use less if you prefer a milder spread)
  • 1 teaspoons Dijon mustard

Butter Sauce

  • ¼ cup butter (salted butter)
  • 1 tablespoon Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • ¼ teaspoon onion powder

Sandwiches

  • 12 Slider Rolls
  • 8 ounces roast beef (sliced thin)
  • 6 slices provolone cheese
  • ½ teaspoon poppy seeds

Instructions
 

Horseradish Mayo

  • Prepare horseradish mayo by combining mayonnaise, horseradish, and mustard together in a bowl.
    ¼ cup mayonnaise, 1 tablespoon horseradish, 1 teaspoons Dijon mustard

Butter Sauce

  • Melt butter, mustard, Worcestershire sauce, and onion powder together. Turn off the heat as soon as the butter is melted. Mix to combine.
    ¼ cup butter, 1 tablespoon Dijon mustard, 2 teaspoons Worcestershire sauce, ¼ teaspoon onion powder

Sliders

  • Slice buns in half. If the buns are attached, leave them as one large slab and slice the entire slab in half.
    12 Slider Rolls
  • Place the bottom half of the buns in an ungreased baking dish.
  • Spread the mayo over both sides of the buns.
  • Layer roast beef and then cheese on the buns. I like to lay the roast beef in little bunches, rather than flat layers.
    8 ounces roast beef, 6 slices provolone cheese
  • Place the top half of the buns and then brush on butter over the top and side of the buns. Use all the butter mixture.
  • Sprinkle with poppyseeds and cover the pan with foil
    ½ teaspoon poppy seeds
  • Bake in a preheated 350°F oven for 25 minutes. Remove foil and continue baking for 5-7 minutes until cheese is melted.
  • Remove the sliders from the baking dish and separate each slider by slicing between each bun.
  • Serve hot or warm.

Notes

  • The amount of horseradish is flexible. Add more for a spicier sauce or add less for a milder sauce.
