Pasta and Pea Salad

Pasta and Pea Salad is a simple, light, and refreshing salad with peas, pasta, and lemon. This vegan pasta salad is perfect for a potluck or a family luncheon.

My cousin is visiting for a few days. I told her I wanted a recipe for pasta salad. She said she makes a great Pasta and Pea Salad.

Delicious pasta salad

Her method of cooking is to throw in a little of this and a little of that. No recipes are needed and her food is always amazing. We adjusted to the ingredients we had on hand and measured everything so I could share her recipe!

This Pasta and Pea Salad is definitely a winner! It's light, tasty, and easy to make!

Ingredients for pasta and pea salad

  • macaroni pasta
  • peas
  • lemon zest
  • olive oil
  • chives
  • shallots
  • garlic
  • salt and pepper

Fresh or Frozen Peas?

The peas are the star of this dish. We used frozen peas because that's what we had on hand. Frozen peas have an amazingly great taste and were great in this salad.

Ingredients
  

  • 8 oz salad macaroni pasta
  • 16 oz peas (frozen)
  • ½ teaspoon lemon zest
  • 4 teaspoons fresh squeezed lemon juice
  • ¼ cup olive oil
  • ¼ cup chopped chives
  • 2 Tablespoons shallots (minced)
  • 1 garlic clove (minced)
  • ½ teaspoon salt
  • ½ teaspoon pepper

Instructions
 

  • Cook pasta according to package directions. Drain and rinse under cool water. Add pasta to a large bowl.
    8 oz salad macaroni pasta
  • Add peas, lemon zest, lemon juice, olive oil, chives, shallots, garlic and salt and pepper. 
    16 oz peas, ½ teaspoon lemon zest, 4 teaspoons fresh squeezed lemon juice, ¼ cup olive oil, ¼ cup chopped chives, 2 Tablespoons shallots, 1 garlic clove, ½ teaspoon salt, ½ teaspoon pepper
  • Stir gently until all ingredients are incorporated.

Cook pasta to al dente

    I love the simplicity of this! Sometimes it's the recipes with the shortest ingredient lists that pack the most powerful flavor punches. I've always been curious about what to do with such small pasta shapes like this one, but this looks perfect for a dish like this, where the other ingredients are similarly sized.

    The method of cooking when you "throw in a little of this and a little of that" is my favorite. Indeed, it often results in most scrumptious meals. The problem is when I need to reconstruct the recipe later on, that's the issue (Well, while cooking I often keep a piece of paper to track all the ingredients/amounts/time, but sometimes this doesn't work hah). Peas is one of my favorite additions to pasta so this simple yet delicious salad sounds great to me!

    Your cousin's method of cooking sounds like Laura's! She always whips up amazing dishes, but she never has a recipe...so it's impossible to recreate them exactly. Glad you committed this one to paper (err, digital paper) because now you can recreate it whenever you want! 🙂 Hope your cousin's visit has been fun!

      I do write all recipes down in a notebook when I'm cooking. I'm always making changes as I go. We've got this one saved now! I'm going to need to tap into her cooking brain for more great recipes!

    I love this! Whenever I'm feeling lazy and just want to make a quick pasta for dinner, I ALWAYS add peas, so this is right up my alley. And so perfect for summer!
