Chicken Soup with Pasta
Ingredients
- 1 small onion (diced)
- 3 large carrots (diced)
- 2 stalks celery (diced)
- 2 cloves garlic (minced)
- 1 Tablespoon olive oil
- 10 cups homemade chicken broth
- 2 bay leaves
- 1 cup cooked chicken (chopped or shredded)
- 1 cup small salad macaroni pasta (uncooked)
- ½ - 1 teaspoon salt (adjust to your liking)
- 1 teaspoon pepper
Instructions
- Heat olive oil in a large pot.1 Tablespoon olive oil
- Add onions, carrots and celery. Saute on medium heat for 3-5 minutes.1 small onion, 3 large carrots, 2 stalks celery
- Add garlic, stir for 30 seconds, just until fragrant.2 cloves garlic
- Add broth and bay leaves. Simmer for 20-30 minutes10 cups homemade chicken broth, 2 bay leaves
- Add pasta. Simmer for 5 minutes..1 cup small salad macaroni pasta
- Add chicken. Simmer for 3-5 minutes until chicken is heated through and pasta is cooked.1 cup cooked chicken
- Add salt and pepper.½ - 1 teaspoon salt, 1 teaspoon pepper
- Remove bay leaves, serve.
