    Blueberry Lemon Popsicles

    Fun fruit popsicles are a perfect way to celebrate summer - or any day!

    These blueberry lemon popsicles are made with just three simple ingredients - blueberries, fresh lemon zest and juice and yogurt.

    Why make these popsicles

    If you've got kids, popsicles are the ultimate summertime treat! Making your own just makes good sense.

    Not only are they more economical, but you can also control what you put in them. No artificial ingredients in these delicious frozen treats!

    These lemon blueberry popsicles are made with just blueberries, lemon and yogurt. And kids and adults love them!

    I don't  mind if my kids grab and eat these throughout the day. They can eat as many as they want, as long as they save some for me!

    Key ingredients

    A bowlful of blueberries along with a bowl of yogurt and a fresh lemon.

    This recipe only uses three simple ingredients:

    • blueberries - fresh or frozen
    • yogurt - I've used vanilla yogurt, but any flavor or type will work
    • lemon - use for zest and juice

    Step by step directions

    Use a food processor or a blender:

    • Place everything into a food processor

    • Pulse until smooth
    Pureed blueberries in a food processor bowl.
    • Pour into popsicle cups

    • Freeze

    Variations

    Make these popsicles your own and add your favorite ingedients!

    • Use any type of yogurt - plain, blueberry, lemon, greek, nonfat, or a goat's milk yogurt.
    • Use fresh or frozen berries - just add as is. The food processor will mix them up.
    • Add orange zest and orange peel instead of lemon.

    Tips for making popsicles

    • Allow enough time for the popsicles to freeze. Time will vary depending on your freezer and the size of your molds.
    • Popsicle molds vary in size. This recipe used ¼ cup capacity molds. Double or triple this recipe as needed.
    • Don't overfill your molds. The filling does expand a bit as it freezes.
    • Excess filling can be eaten as a smoothie or refrigerated for later.

    Recipe FAQs

    How long will Popsicles last?

    These should last for up to one month in your freezer. However, they'll still be tasty after that amount of time. They just might become a bit icy, depending on your freezer.

    What if I don't have popsicle molds?

    You can still make this fun treat without a mold. Use small paper cups and wooden sticks.

    When ready to eat, just peel away the paper cup and enjoy!

    Ingredients
      

    • 1 cup vanilla yogurt
    • 1 Tablespoon lemon zest

    • 1 cup blueberries

      Blueberries are one of my favorite berries. Popsicles sound like a wonderful plan. Blueberry + yogurt + lemon is a yummy combo. These luscious blueberry lemon popsicles look so pretty and delish. I wish I could grab one right away. 🙂

      Looks like a good plan ... except I don't have popsicle molds. And rarely have Greek yogurt in the fridge! I remember having popsicle molds in the house when I was a kid but we just froze up Kool Aid. I've been seeing so many recipes for making treats like this that I keep thinking maybe I should get some molds. I usually cruise past the ice cream treats at the grocery store and see what's on sale.
