Apple Breakfast Sausage

Making homemade breakfast sausage is easy and delicious with this apple pork breakfast sausage. 

This recipe has been updated and revamped to make a simpler, but just as delicious sausage.

Homemade pork sausage with apples

Breakfast is definitely my favorite meal of the day. I love mornings and love to start the day with a great cup of coffee and a wonderful breakfast. This Apple Pork Breakfast Sausage makes breakfast even more amazing!

This sausage is easy to make and comes together in no time at all. You can also mix everything together the night before and then cook in the morning.

My top tips for making breakfast sausage:

  • Don't Overmix: You want everything well combined, but you don't want to mix the sausage mixture beyond that. Overmixing can cause the sausage patties to become tough.
  • Let the Mixture Rest: Give at least 10 minutes (or more) for the flavors to meld together.
  • Cook Over Medium-Low Heat: The apples and maple syrup can easily become scorched if using too high of heat. Cook low and slow or use my method for cooking breakfast sausage in the oven!

Ingredients for making sausage

  • Ground Pork - You'll need one pound of unseasoned ground pork. I often find this at the meat counter in my local grocery store.
  • Apple - Use a crisp, flavorful apple like a Fuji, Granny Smith, Honey Crisp, or Pink Lady.
  • Seasoning - Dried herbs are mixed in this sausage. Use garlic powder, onion powder, dried sage, salt, pepper, and red pepper flakes. The red pepper flakes add a touch of heat, but it isn't spicy. Feel free to increase or reduce the amount of red pepper to suit your taste.
  • Maple Syrup - Use pure maple syrup.

Making the sausage

  1. Grate apple.
  2. Squeeze all the juice from the grated apple.

  1. Combine pork, apples, and seasoning.

  1. Divide the mixture into evenly sized portions.

  1. Form into patties.

  1. Cook in a lightly greased pan over medium-low heat.

Tips for making sausage

  • Squeeze all the juice out of the grated apple. I place a handful of grated apples in my hands and squeeze. You could also wrap in a clean dish towel and twist the towel until all the juice is removed.
  • Don't overmix the mixture. Use your hands to mix everything together and stop mixing as soon as everything is well distributed.
  • Allow the mixture to rest to allow the flavors to meld together. Rest for at least 10 minutes or cover and refrigerate overnight.
  • Cook over medium-low heat in a lightly greased pan. The apples and maple syrup can easily burn over high heat.
  • Cook until fully cooked and an internal temperature reaches at least 160°F.

Ingredients
 
 

  • 1 pound ground pork
  • ½ cup grated apple (Shredded and squeezed dry and then measured to ½ cup. )
  • ¾ teaspoon salt
  • ½ teaspoon pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon ground sage
  • ¼ teaspoon red pepper flakes
  • 2 tablespoons maple syrup

Instructions
 

  • Peel and grate apple. Squeeze grated apple to remove all the juice. Measure out ½ cup of grated apples.

  • In a bowl, add ground pork, apples, salt, pepper, garlic powder, onion powder, sage, and red pepper flakes. Mix everything together with your hands.

  • Mix in maple syrup. Set aside for at least 10 minutes to allow flavors to develop.

  • Mix one final time to make certain everything is well mixed.
  • Form into patties and place on a baking sheet lined with parchment paper.
  • Cook over medium-low heat in a lightly greased pan until cooked through.

Notes

    apple overcooked before the vinegar reduced. made the patties too wet even without added vinegar. I added some bread crumbs to absorb some liquid. I'd suggest peeling the apples and starting the vinegar before adding the apples. Tasted good though.

      Just a clarification - this recipe calls for apple cider - not apple cider vinegar. No vinegar in this recipe. I'm glad you thought it still tasted good.

    Wow, this is an awesome post, Kathy! I'm a little behind in getting to it just because I was travelling for the first part of the week.
    But now it's almost the weekend...and weekends are made for delicious breakfasts! I love a good breakfast sausage, but I have totally never thought about making my own. Like the thought has literally never crossed my mind. But I'm going to have to try it out now. I love the bit of maple syrup you've got in there!

    For whatever reason, I have never thought to make my own breakfast sausage, but this looks absolutely irresistible! I love that you added both apple cider and actual apples. I can only imagine how amazing this must smell while it's cooking!

    Hi Kathy, I am with you on breakfast being a favorite. I believe it is the most important start to a day. The first thing out of Nicoletta's mouth upon waking up is where is my breakfast, proceeded by me getting up and beginning the morning ritual, and I don't mind because it is a way to start the day with a little love. My son and his partner love breakfast sausages, or any sausages for that matter and you have inspired me to want to create these. I love the way the pork caramelizes and turns that golden brown, and as you see this you know there are going to be crispy bits packed with flavor, and the apple along with the sage are perfect combinations to wake up those taste buds. Well done!
