Sheet Pan Sausage, Peppers and Onions

Sheet Pan Sausage, Peppers and Onions

One pan dinner

There's just something so nice about piling everything onto a sheet pan and plopping it in the oven and letting the oven do all the work!

This Sheet Pan Sausage, Peppers and Onions is really easy to assemble and in 40 minutes, dinner is ready to serve!

I've experimented with this recipe several times and the only thing I kept changing was the potatoes. I knew I wanted potatoes in this meal, but the potatoes took the longest to cook.

I tried cubing them smaller and increasing the cooking time, but they just weren't perfect.

Finally I decided to give the potatoes a jump start. Putting them in the oven at a higher temperature for 10 minutes was exactly what they needed.

Then I just pile everything else on and back in the oven it goes for 30 minutes. Everything comes out perfectly cooked!

Key ingredients

Italian sausage next to potatoes, onions, and bell peppers.
  • Italian Sausages - sweet or spicy
  • Potatoes - I used red potatoes, but yellow work fine too. Baby potatoes are another great choice.
  • Bell Peppers - Use all one color or two different colors. Select red, yellow or orange because they are sweeter than green peppers.
  • Onion - White or yellow onion

Step by step directions

  • Cut potatoes into cubes.
  • Place in a bowl and drizzle one tablespoon of olive oil over potatoes
  • Toss to coat
  • Place on a sheet pan lined with parchment paper or foil
  • Sprinkle with salt
  • Place in a preheated 415°F oven for 10 minutes
  • Cut peppers and onions into slices. Place in same bowl as you tossed the potatoes
  • Add one tablespoon olive oil, red pepper flakes, salt and pepper. Toss to coat.

  • After 10 minutes, remove potatoes from oven. Reduce oven to 400°F
  • Add peppers and onions
  • Add Italian sausages to pan
  • Sprinkle with fresh thyme

  • Return sheet pan to the oven for 30-35 minutes until sausages reaches at least 165°F and potatoes are cooked through
  • Serve hot

Recipe tips

  • Lining the sheet pan is completely optional. However, it does make clean up easy peasy!
  • Cut potatoes in bite sized pieces. If too large, they take longer to cook.
  • Keep peppers and onion slices a consistent size
  • Spread everything out on pan as much as possible. Try not to make too big of piles.
  • Top with a few sprigs of fresh thyme as a garnish
  • Serve directly on the sheet pan, or remove everything and serve on a platter

Frequently asked questions

If I don't have a sheet pan can I use a casserole dish?

Yes, however since most casserole dishes are much smaller in size, you will want to use two casserole dishes. Don't pile ingredients too high or they will take too long to cook and will steam rather than dry cooking.

Can I add additional herbs?

Yes, feel free to add rosemary, basil or marjoram.

Ingredients
  

  • 4 Red potatoes (about 1 pound)
  • 2 tablespoons olive oil (divided)
  • 2 Bell peppers (sliced)
  • 1 Onion (sliced)
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 5 Italian sausages
  • 3 sprigs fresh thyme

Instructions
 

  • Preheat oven to 415°F
  • Cut potatoes into cubes.

  • Toss to coat
  • Place on a sheet pan lined with parchment paper or foil
  • Sprinkle with salt

    Good call on jump-starting those potatoes! This looks like a delicious (and easy) weeknight meal which is good since Robbie starts 1st grade in about a week. We'll be needing some easy weeknight meals! I do love sausage, and I can almost taste the flavors here!!
