    Cranberry Apple Bread

    Quick bread filled with cranberries and apples.

    Quick bread with fresh cranberries and apples! This cranberry apple bread is perfect for the holidays or whenever you want a delicious homemade bread.

    This weekend is our final weekend for fall soccer. The older the boys get the longer the seasons seem to be. I truly love watching soccer, but by the end of the season I am ready for it to be over! The end of soccer season means more time at home and more time for baking!

    Can I freeze this bread?

    Yes! This is a perfect bread to make ahead of time and store in the freezer! To freeze bread, allow bread to fully cool. Slice bread and then place in a freezer safe bag. Use frozen bread within 1 month of freezing for best results. 

     

    Between regular league games and tournaments, we travel quite extensively for the boys' games. That is just what seems to happen when you live in a small town. Today's trip is an hour and a half each way. I always pack up snacks for the trips. Today they are getting this cranberry apple bread. It has tart fresh cranberries and chunks of apples with a touch of cinnamon and nutmeg.

    Do I use fresh or dried cranberries?

    This recipe uses fresh cranberries.

    Cranberry Apple Bread

    Ingredients
     
     

    • 4 Tablespoons butter (melted)
    • ¾ cup sugar
    • 2 eggs
    • ½ cup apple cider or apple juice
    • 2 ¼ cups flour
    • 1 teaspoon ground cinnamon
    • ¼ teaspoon ground nutmeg
    • 2 teaspoons baking powder
    • 1 cup apples (chopped)
    • 1 cup cranberries (chopped)

    Instructions
     

    • In a large bowl mix butter,sugar, eggs and apple cider together.
    • Pour flour on top and sprinkle cinnamon, nutmeg and baking powder over flour.
    • Mix dry ingredients into the wet ingredients.
    • Fold in apples and cranberries.
    • Pour batter into a greased loaf pan.
    • Bake in a preheated 350 degree oven for 55-60 minutes.
    • Let cool in pan for 10 minutes.
    • Remove from pan and let cool completely on a baking rack.

      I've been eating Thomas's cranberry bread every morning, but homemade and with apples sounds sooo much better! I'd love to enjoy a warm slice with a little bit of butter and my coffee 🙂

      Lucky boys to get this delicious bread Kathy! Our soccer season just ended too and we have significant travel in the mix as well. I'm relieved that Saturdays will be freed up some, but basketball starts next week! I love your combination of cranberries and apples in this yummy bread. It screams fall!! 🙂 I love Fall.       This is the ideal loaf of bread to go with that Thanksgiving turkey! And so much nicer than a quick bread made from a box (although I confess I have sunk that low before, hehe) I need to bring these to a few of our looming Thanksgiving festivities cropping up!

      Love quick breads and this version looks delicious, Kathy. My brother kids play lacrosse tournaments and I know he's always kind of relieved when the season is over since there is so much driving up and down the east coast every single weekend.

      mmmmm, apples and cranberries...yum! And with a touch of cinnamon and nutmeg to compliment and enhance their flavor! Love it! It looks so moist and bursting with juicy pieces of fruit. Great for snack and breakfast in my eyes 🙂 !
