Roasted Asparagus

This delicious vegetable dish is perfect for an elegant dinner party or for an everyday dinner. Roasts in the oven in just 15 minutes.

Easy and delicious asparagus

Asparagus is a wonderful seasonal vegetable that is full of flavor and good for you nutrients.

Roasting asparagus in the oven is so easy. It is a perfect vegetable to cook because while you are pulling together last-minute steps to your dinner, the asparagus is roasting away in the oven.

After 15 minutes you pull it out and serve. That's it! Perfect, every time!

You've got to love any sort of dish that is quick and easy to make. This roasted asparagus is elegant enough for dinner parties and quick enough for everyday dinners.

Roasting really brings out the flavors of vegetables. Try these roasted brussels sprouts and roasted broccoli!

This asparagus goes perfectly with honey lime shrimp!

Key ingredients

There are only three main ingredients in this recipe - that's it. Add a little salt and pepper and you're good to go!

  • Fresh asparagus - look for firm stalks with crisp heads with the tips closed and compact
  • Olive oil
  • Parmesan cheese - shredded

Step by step directions

  • Cut the ends of the asparagus. Take a stalk and bend until it snaps, this is your marker for cutting off the ends.

  • Line up asparagus with the snapped asparagus and cut to length

  • Place cut asparagus on a baking sheet
  • Drizzle olive oil over asparagus and roll asparagus around so it becomes fully coated with oil

  • Sprinkle with salt and pepper and parmesan cheese

  • Bake in a 450° oven for 15 minutes

Recipe tips

  • Omit parmesan cheese, if desired
  • Make certain oven is fully preheated to 450°
  • Serve right after baking while still hot

Recipe FAQs

Why do I need to cut off the ends of asparagus?

The ends of asparagus are often tough. Cutting off the ends helps ensure the entire stalk is edible.

Can I use frozen asparagus?

This recipe is best when using fresh asparagus.

Ingredients
  

  • 1 pound fresh asparagus
  • 1 Tablespoon olive oil
  • 1 Tablespoon grated Parmesan cheese
  • salt
  • pepper

Instructions
 

  • Trim woody ends from asparagus. Place on a baking sheet.
  • Drizzle with olive oil. Toss asparagus lightly so olive oil coats all pieces. 
  • Sprinkle Parmesan cheese on top of asparagus.  
  • Season with salt and pepper.
  • Place in a preheated 450° oven for 15 minutes.

    Like you, I don't remember eating asparagus when I was a kid, but I love it now! Roasted asparagus is such a simple yet amazing dish! In fact, we have some in the fridge right now waiting to be cooked. I love the bit of freshly grated Parm on top! 🙂

    I love roasted asparagus (and even love it raw). I was a little picky as a kid, but now I'll pretty much eat any veggie. And you really can't go wrong when you add some cheese to the mix 😉

    Roasted asparagus is one of my favorites Kathy. We always had it growing up because my mother loves it too. Perfect in omelettes and for cream of asparagus soup!

    I usually cook my asparagus in the microwave for several minutes, but roasting them gives you that slightly crunchier taste, especially after adding the Parmesan cheese- time for me to get out the roasting pan!!

    I also did not eat asparagus as a child, Kathy. But as a grown up I love roasted asparagus. Your look so scrumptious. Love that you added parmesan.
