Cinnamon Apple Cake

This Cinnamon Apple Cake is an easy-to-make snack cake filled with freshly grated apples and cinnamon.

Make in just one bowl and simply finish with a sprinkling of powdered sugar or a dollop of whipped cream.

I love making this apple cake when fall arrives. It's filled with warm notes from the cinnamon and is perfect when you're harvesting apples.

It's easy to make and can be whipped together in no time at all. And since no frosting is needed, you can eat this tasty cake while it's still warm.

  • Apples - I like to use baking apples, but any apple will work. Pick your favorite.
  • Brown Sugar - The brown sugar adds sweetness and a rich flavor.
  • Butter - Regular salted butter at room temperature.
  • Walnuts - Add a bit of crunch to the cake. You could also use pecans.

  • Cream butter and sugar together for 2-3 minutes.
  • Add eggs one at a time, mixing after each egg.
  • Stir in vanilla.
  • Add flour, cinnamon, baking powder and salt. Mix just until combined.

  • Place batter in a greased 8x8 inch baking dish and bake in a preheated 350°F oven for 35-40 minutes or until baked through.

Recipe tips

  • Use a box grater to grate the apples.
  • Some apples will darken right away. That's okay. The cake is dark from the brown sugar and the apples won't be noticed.
  • Cake can be served warm or at room temperature.
  • Add powdered sugar just before serving.
  • Once the cake has fully cooled, cover and store at room temperature for 2-3 days.

Ingredients
 
 

  • ½ cup butter (at room temperature)
  • 1 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1¼ cups flour
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1½ cups shredded apples (peeled)
  • ½ cups chopped walnuts
  • 1 tablespoon powdered sugar (optional)

Instructions
 

  • Preheat oven to 350°F.
  • Cream butter and sugar together for 2-3 minutes.

  • Add eggs one at a time, mixing after each egg.

  • Add flour, cinnamon, baking powder and salt. Mix just until combined.

  • Place batter in a greased 8x8 inch baking dish and bake in a preheated 350°F oven for 35-40 minutes or until baked through.
  • Allow cake to cool in the pan.
  • Top with powdered sugar and serve.
    1 tablespoon powdered sugar

Notes

    • Use a box grater to grate the apples or a grater with large holes. 
    • Some apples will darken right away. That's okay. The cake is dark from the brown sugar and the apples won't be noticed.
    • Test cake for doneness by inserting a toothpick in the center of the cake. If many moist crumbs stick to the toothpick, the cake needs a few more minutes. If just a few crumbs are on toothpick, the cake is baked through. 
    • Cake can be served warm or at room temperature.
    • Add powdered sugar just before serving.
    • Once the cake has fully cooled, cover and store at room temperature for 2-3 days.
