Huckleberry Lemonade

Huckleberry Lemonade is a refreshing, fruity lemonade made with freshly squeezed lemon juice and wild huckleberries.

If you have access to huckleberries, you'll want to make this lemonade.

Huckleberries

If you know what huckleberries are, then you know how exclusive they are. Huckleberries grow in the mountains in the Inland Northwest. Picking huckleberries is a treasure hunt. It takes time to pick them, but they are worth their weight in gold.

If you're unable to pick huckleberries, you can usually find someone willing to sell you some. However, they are a pretty penny. The latest prices in my area were $22 per pound. There's about 3 cups of huckleberries in one pound! I'm not willing to sell mine. Ever. But I will make you a special recipe with my huckleberry stash!

This huckleberry lemonade is a great recipe to make. Not only because it's delicious, but it also doesn't take many huckleberries to make, and you still get all the deliciousness of the berry.

After you've made the lemonade, you can use the strained huckleberries. You never want a single huckleberry to go to waste! I like to serve them over ice cream, yogurt, or add to pancakes.

Ingredients for making huckleberry lemonade

A bowl of fresh huckleberries, a bowl of sugar, and fresh lemons on a wooden board.
  • Huckleberries - You can use fresh or frozen berries. Which is a good thing, because we have access to fresh for a limited time. But if you have frozen huckleberries, you can make this lemonade all year long! If you don't have huckleberries, you could make this with blueberries.
  • Lemons - Use freshly squeezed lemon juice. The bottled stuff just isn't the same.
  • Sugar - Granulated sugar is needed to sweeten the tart lemon juice.

Making the lemonade

  1. Heat huckleberries, sugar, and water together over a medium heat until the mixture is simmering. Simmer for 2-3 minutes.

  1. Strain huckleberries using a fine meshed strainer. Don't mash the berries down, or the liquid will become cloudy.

  1. Cool for at least 30 minutes.

  1. Add huckleberry simple syrup, freshly squeezed lemon juice, remaining water into a pitcher. Stir.
  2. Add ice just before serving.

💡 Great idea

  • The huckleberry simple syrup can be used for mixing into cocktails. Once made, allow it to cool, then cover and refrigerate for up to 7 days.
  • Don't waste the huckleberries you used to make the simple syrup. You can add a few of the huckleberries to the lemonade or you can serve them over vanilla ice cream, add to pancakes, or eat as a snack.

Huckleberry Simple Syrup

  • 1 cup huckleberries (fresh or frozen)
  • ¾ cup sugar
  • 2 cups water

Lemonade

  • 1 cup lemon juice (freshly squeezed)
  • 4 cups water

  • Allow the simple syrup to cool for at least 30 minutes. You can also speed up this process by adding 1 cup of ice cubes to the hot mixture.

Lemonade

  • Add huckleberry simple syrup, freshly squeezed lemon juice, remaining water into a pitcher. Stir. Add ice just before serving.
    1 cup lemon juice, 4 cups water

Notes

  • The huckleberry simple syrup can also be used for mixing into cocktails. Once made, allow it to cool, then cover and refrigerate for up to 7 days.
