A delicious breakfast sandwich
My family loves breakfast. And they love breakfast sandwiches. We often make up English Muffin Breakfast Sandwiches, or Panini Breakfast Sandwiches, and now we've added these delicious Croissant Breakfast Sandwiches to the mix.
What I love about breakfast sandwiches is that I can easily create breakfast for everyone all at once. And they can savor one for a leisurely breakfast or grab one to eat on the go. I'll often make extras, and whatever isn't eaten gets wrapped up individually and stored in the fridge or the freezer. They are easy to reheat, and my family loves grabbing one.
Ingredients needed

- Croissants - I prefer using large croissants for a full-sized breakfast sandwich, but small or mini croissants would also be great. Mini ones would be perfect on a brunch buffet.
- Eggs - The eggs get scrambled and cooked, and added to the croissants.
- Meat - Select crispy cooked bacon or thinly sliced ham.
- Cheese - Any type cheese works. If you like it, and it melts, it will work in these sandwiches. My preference is sliced cheddar, pepper Jack, or smoked Gouda.
Making Croissant Breakfast Sandwiches

- Scramble eggs with a bit of salt and pepper.

- Cook eggs in a pan over medium low heat with melted butter.

- Slice croissants in half and place on a baking sheet.
- Place cooked scrambled eggs on top of the bottom half of each croissant.

- Add your choice of meat on top of eggs.

- Add cheese and place top half on top of sandwich.

- Place baking sheet in oven for 5-10 until cheese is melted.
- Serve hot or at room temperature.
Recipe tips
- When cooking the eggs, don't break into small pieces. Instead, try to keep them in larger bits. This makes eating the sandwich a bit easier, because the eggs won't fall out of the sandwich.
- Make these sandwiches your own. Add your favorite ingredients.

To prepare ahead of time, prepare the sandwiches, but don't place in the oven. Wrap each sandwich in parchment paper or in plastic wrap and place in the refrigerator. In the morning, unwrap and place on baking sheet and heat in the oven until heated through.
To save an already baked croissant breakfast sandwich, allow the sandwich to cool, then wrap and refrigerate. Reheat in the microwave or in the oven.
