    Chipotle Mayonnaise

    A tasty condiment perfect for spicing up your everyday dishes. This chipotle mayonnaise can be made in just 5 minutes and adds a little heat, a little smokiness and a lot of flavor to sandwiches and more.

    Use as a dip for chips or veggies or as a spread for burgers and sandwiches.

    Spicy, smoky mayo

    When you can transform an ordinary ingredient into something amazing in just 5 minutes, you've got to do it! Chipotle mayonnaise is full of spicy, smoky flavors.

    This chipotle mayo is perfect for adding flavor to so many dishes - tacos, salads, sandwiches, turkey wraps, and burgers.

    Chipotle mayo sauce can be used as a dip for fries, chips or veggies.

    You control the heat by adding just a few chipotles in adobo sauce or spice it up by adding more.

    It's so fun to add to a burger buffet and let everyone spice up their burgers. I like to have some available in the fridge to spice up a turkey sandwich.

    If you love the spicy taste of chipotle, you'll also want to try this chipotle crema.

    Key ingredients for chipotle mayo

    Just three simple ingredients:

    • Mayonnaise - use whatever you have in your fridge. Make it vegan by using a vegan mayo!
    • Chipotle peppers - canned packed in adobo sauce
    • Lime juice - fresh lime juice is key

    Making chipotle mayo

    • Place mayo, chipotle peppers and lime juice in a food processor
    • Blend till smooth
    • Taste and add a bit more adobo sauce or another chipotle pepper if more heat is desired

    Recipe tips and variations

    • Use the adobo sauce that coats the chipotle peppers when removed from the can
    • For a spicier taste, add an additional pepper and more adobo sauce
    • Scrape out the seeds from the inside of the peppers before using
    • Add extra lime juice to make a pourable dressing
    • To make a creamier version, add a tablespoon of milk

    Serving suggestions

    • Use any place you would normally use mayonnaise - on a sandwich, burger, wrap or in tuna salad
    • Serve as a dip with fresh veggies and corn chips
    • Use instead of ketchup with french fries
    • Drizzle on fish tacos
    • Use as a salad dressing for a taco salad
    • Spread the outside of two pieces of bread to make a spicy grilled cheese sandwich. The mayo replaces the traditional butter you'd normally use.

    Chipotle mayonnaise will last up to two weeks when covered and stored in the fridge.

    What are chipotle peppers?

    Chipotles are a smoked, dried jalapeno pepper. You can buy canned chipotle peppers that are soft and pliable packed in an adobo sauce. The adobo sauce rehydrates the peppers and the sauce takes on the smoky and spicy flavor.

    Both the peppers and the sauce can be used.

    Ingredients
      

    • 1 cup mayonnaise
    • 2 chipotle peppers (with adobo sauce)
    • 1 tablespoon lime juice (fresh squeezed)

    Instructions
     

    • Place everything in a food processor
      1 cup mayonnaise, 2 chipotle peppers, 1 tablespoon lime juice
    • Pulse until smooth
    • Add additional lime juice if you'd like it a bit thinner

      We love anything with chipotle and chipotle mayo is definitely a favourite, especially this time of year on burgers and stuff. Love that smoky heat! So good!

        It adds so much flavor and a bit of heat, but it's not what I'd call hot. It adds so much flavor to a sandwich.

      This sounds fantastic, Kathy! I'm dreaming of how good this would be on a BLT using fresh garden tomatoes. Yum! The little kick from the chipotle would be great...and I would never have guessed about the lime juice. Love it!
