These Oven Roasted Green Beans make a perfect side dish. They are easy to make, ready in no time at all, and are full of flavor.

Made with just fresh green beans, olive oil, fresh lemon juice and a sprinkling of salt.

Easy green beans

Green beans are my husband's go-to veggie. We grow them in the summer and we love to pick them for an easy side dish. But we don't just eat them in the summer. Good quality fresh green beans are available in the grocery store year round.

These green beans have minimal prep. Just wash, trim, coat with olive oil, and bake. They're perfect for every day dinners, but they are fancy enough for holiday meals too.

  • Green Beans - Select fresh green beans that are firm and not wilted.
  • Olive Oil - Adds flavor and helps the beans brown.
  • Lemon Juice - Use freshly squeezed lemon juice. The lemon juice adds a bit of brightness and flavor to the beans.
  • Salt - I like to use a coarse salt to sprinkle over the finished beans. Use flake sea salt like Maldon salt.

  1. Wash and trim the ends off of the beans. Pat beans dry with a paper towel.
  2. Place in a bowl and drizzle with olive oil. Toss to coat.

  1. Spread beans out on a parchment lined baking sheet. Leave space between the beans.

  1. Bake in preheated 425°F oven for 15-18 minutes until the beans are tender and slightly brown.

  1. Pile the beans into the center of the tray and squeeze lemon juice over the top.
  2. Place in serving dish and sprinkle with salt.
  3. Serve hot.

  • Use fresh green beans.
  • Don't overcrowd baking sheet. If making a larger batch, you may need to use two baking sheets.
  • Parchment paper is optional. It does help make easier cleanup.

  • 1 pound green beans
  • 2 teaspoons olive oil
  • ½ lemon juice
  • 1 pinch Maldon sea salt (or other coarse salt)
