    Triple Berry Cobbler

    Plenty of fresh berries and an easy-to-make biscuit topping make a delicious Triple Berry Cobbler.

    Cobblers are one of my favorite fruit desserts. I love how easy they are to throw together, but I really love the combination of the juicy fruit and the biscuit topping. My favorite way to eat any cobbler is served warm with a scoop of homemade vanilla ice cream.

    Strawberries, blueberries, and raspberries are the stars in this delicious Triple Berry Cobbler. The combination is a perfect mixture, but you can easily mix and match the berries you love. Make this with just two berries, or swap out the blueberries for huckleberries. The trick to swapping is keeping the proportions the same.

    Ingredients for mixed berry cobbler

    Bowls of raspberries, blueberries by a bowl of sugar, butter and flour.
    • Berries - Fresh strawberries, blueberries, and raspberries. Frozen berries will also work. If you'd like to add blackberries, you can substitute them for one of the berries, or reduce the raspberries to 1 cup and add 1 cup of the blackberries.
    • Lemon Juice - A bit of fresh-squeezed lemon juice helps brighten the flavor of the berries.
    • Flour - Use regular, all-purpose flour.
    • Sugar - Granulated sugar helps sweeten the berries.
    • Butter - I use regular, salted butter. If using unsalted butter, add an additional pinch of salt to the biscuit topping.
    • Milk - Any type of milk works; whole, 2%, or skim.
    • Baking Powder - Helps make the biscuit topping light and fluffy.

    1. Place blueberries and sliced strawberries in a bowl with sugar, flour, and lemon juice.

    1. Toss together. Then add raspberries and gently fold them in.

    1. Place berries in a greased casserole dish.

    1. Using the same bowl, mix together the flour, sugar, baking powder, and salt.
    2. Cut in butter using your fingers or a pastry blender. The mixture should resemble coarse crumbs.

    1. Mix in milk. Stir just until everything is mixed together.

    1. Take large spoonfuls of the biscuit dough and drop directly onto the berries. I try to make biscuits on top of the berries, one for each serving.
    2. Sprinkle a bit of sugar over the top of each biscuit.
    3. Bake in a preheated 375°F oven for 30-40 minutes, until the biscuits are browned and the filling is bubbly.
    4. Cool for at least 10 minutes before serving. Serve hot or at room temperature.

    Recipe tips

    • The filling needs to cook until it's bubbly to thicken slightly.
    • If the biscuit topping gets too dark before the filling is bubbly, lightly tent with a piece of foil.
    • Mix and match the berries to your liking. You can make any combination, just try to keep the proportions the same.
    • If using frozen berries, don't thaw before using. Break up the frozen berries so they aren't in one large clump. Increase baking time by 10-15 minutes.

    This cobbler is best eaten the same day it's made. Any leftovers can be covered and stored in the refrigerator for 2-3 days.

      Easy to make and VERY easy to eat. Not too sweet. Used various berries and all were enjoyed. Bisquit topping is light and flavourful Will be making this recipe again!!!
