Delicious roasted fingerling potatoes are so easy to make and are a perfect side dish for every night dinners or holiday meals.

Made with just olive oil, garlic, fresh herbs and sea salt.

Why make these potatoes

It just can't get any easier than roasted fingerling potatoes. Just slice, cover with olive oil and herbs and bake until golden.

Fingerling potatoes have a very soft skin and there's not need to peel them. The interior of the potato is soft and creamy.

Because fingerling potatoes are small, they don't take long to cook. They'll be ready in about 30 minutes! Perfect for getting dinner on the table.

These roasted potatoes are also delicious for breakfast served with a couple of over easy eggs.

Key ingredients

Potatoes, rosemary and garlic on a baking sheet.
  • Fingerling potatoes
  • Fresh herbs - rosemary, thyme or parsley
  • Garlic
  • Olive oil
  • Coarse salt

Step by step directions

  • Slice potatoes in half lengthwise
  • Place olive oil, garlic and herbs in a bowl
  • Sliced potatoes on a cutting board.
  • Olive oil with rosemary and garlic.
  • Add sliced potatoes and toss to coat
  • Place sliced potatoes, cut side down on a baking sheet and sprinkle lightly with salt
  • Bake in a preheated 400°F oven for 30-35 minutes until golden
  • Sliced potatoes on a baking sheet.
  • Golden fingerling potatoes on a baking sheet.
  • Remove from oven and sprinkle with additional herbs and salt
  • Serve hot

Recipe tips

  • Try to select potatoes similar in size
  • Smaller potatoes can be left whole
  • Try not to overcrowd the baking sheet
  • No need to flip the potatoes. Keeping them cut side down allows that golden color to develop.
  • Baking time may vary depending on the size of your potatoes
  • Sprinkle salt to your liking
  • Add a few fresh herbs before serving

Fingerling potatoes are a small, long thin potato that are oblong shaped. They are thinned skinned and when cooked, they have a creamy interior.

Can I make roasted fingerling potatoes ahead of time?

These potatoes are best eaten hot out of the oven. However, any leftovers can be refrigerated and reheated in the microwave or oven.

  • 2 pounds fingerling potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon garlic (about 2 cloves)
  • 1 tablespoon fresh rosemary (or fresh thyme)
  • coarse sea salt

Instructions
 

  • Slice potatoes in half lengthwise
    2 pounds fingerling potatoes
  • Place olive oil, garlic and herbs in a bowl
    3 tablespoons olive oil, 1 teaspoon garlic, 1 tablespoon fresh rosemary
  • Add sliced potatoes and toss to coat
  • Place sliced potatoes, cut side down on a baking sheet

    This is such a simple, but classic side dish, Kathy! Seriously - this can go with almost any main course. Grilled chicken? Sure! Steak? Yup. Sandwich? Of course. A big plate of these as a main dish? Why not? 🙂 Thanks for sharing...although now I'm craving roasted potatoes, and it's only 8am here. Haha!
