Why make these potatoes
It just can't get any easier than roasted fingerling potatoes. Just slice, cover with olive oil and herbs and bake until golden.
Fingerling potatoes have a very soft skin and there's not need to peel them. The interior of the potato is soft and creamy.
Because fingerling potatoes are small, they don't take long to cook. They'll be ready in about 30 minutes! Perfect for getting dinner on the table.
These roasted potatoes are also delicious for breakfast served with a couple of over easy eggs.

- Fingerling potatoes
- Fresh herbs - rosemary, thyme or parsley
- Garlic
- Olive oil
- Coarse salt
Step by step directions
- Slice potatoes in half lengthwise
- Place olive oil, garlic and herbs in a bowl
- Add sliced potatoes and toss to coat
- Place sliced potatoes, cut side down on a baking sheet and sprinkle lightly with salt
- Bake in a preheated 400°F oven for 30-35 minutes until golden
- Remove from oven and sprinkle with additional herbs and salt
- Serve hot
Recipe tips
- Try to select potatoes similar in size
- Smaller potatoes can be left whole
- Try not to overcrowd the baking sheet
- No need to flip the potatoes. Keeping them cut side down allows that golden color to develop.
- Baking time may vary depending on the size of your potatoes
- Sprinkle salt to your liking
- Add a few fresh herbs before serving

- 3 tablespoons olive oil
- 1 teaspoon garlic (about 2 cloves)

This is such a simple, but classic side dish, Kathy! Seriously - this can go with almost any main course. Grilled chicken? Sure! Steak? Yup. Sandwich? Of course. A big plate of these as a main dish?
