Oatmeal Banana Muffins

These oatmeal banana muffins have oatmeal in the muffin and an oatmeal crumb topping. Perfect for breakfast any day of the week!

Happy New Year!  Why is it that time just continues to go faster every year?  I did take some time to celebrate and bring in the new year.  But staying up till midnight is just way past my bedtime!  I guess I can make the sacrifice once a year.

We spent the evening at my in-laws with family.  That’s my kind of night out!  The kids were a hoot.  They think New Years is the best because they get to eat all sorts of food, drink special sodas and sparkling cider.

About an hour before midnight all the cousins concocted a plan to ring in the New Year by sledding down Grandma’s massive sledding hill right at midnight.

The temperature was down in the single digits, so they bundled up, grabbed head lamps and sleds and headed up the hill.

The plan was 3 minutes before midnight, Grandma would blow an air horn with three quick blasts.  That would be their signal to get ready.  Then right at midnight she would blow it again with one long blast!

All the adults stayed in the house, where it was toasty warm.  Grandma headed out to the deck at the exact times and blasted the horn.

At midnight you could hear the hoots and hollers and then see all the head lamps bounce the way down the hill.

They came back in red faced and exhilarated.  They thought they had accomplished the greatest feat ever…and they had!  How many people can ring in the New Year by sledding right at midnight?

We quickly piled into the car and headed home.  New Year’s morning started out slow and lazy.

The kids and Rod slept in super late.  I welcomed in the New Year by making these oatmeal banana muffins.  It was a perfect start to a new year!

These oatmeal banana muffins are topped with an oatmeal crumble.  It has just a touch of cinnamon and brown sugar!

Nothing like a little extra sweetness to start the day off right!

What ingredients are needed for Oatmeal Banana Muffins?

  • Oatmeal
  • Flour
  • Sugar
  • Baking Powder
  • Baking Soda
  •  Salt
  • Cinnamon
  • Nutmeg
  • Egg
  • Oil
  • Vanilla
  • Bananas

These oatmeal banana muffins are ready for the oven in muffin tins.

 

How do I make oatmeal banana muffins?

  • In a large bowl mix oatmeal, flour, baking powder, baking soda, cinnamon, nutmeg and sugar together.
  • In a smaller bowl mix egg, oil and vanilla. Add to dry ingredients and stir.
  • Stir in bananas
  • Divide into 12 sprayed or lined muffin tins.

How do I make the crumb topping?

You will need:

  • Oatmeal
  • Cinnamon
  • Brown Sugar
  • Butter

Combine all ingredients together in a bowl. 

How long do the muffins bake?

Bake in a preheated 375 degree oven for 20 minutes.

Ingredients
  • 1 1/2 Cups uncooked Oatmeal
  • 1 1/4 Cups Flour
  • 1/2 cup sugar
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt (optional)
  • 1 teaspoon cinnamon
  • pinch ground nutmeg
  • 1 whole egg
  • 1/4 cup oil
  • 1 teaspoon vanilla
  • 3 whole ripe bananas mashed
Topping
  • 1/2 cup oatmeal
  • 1/4 teaspoon cinnamon
  • 2 Tablespoons brown sugar
  • 2 Tablespoons melted butter
Instructions
  1. In a large bowl mix oatmeal, flour, baking powder, baking soda, cinnamon, nutmeg and sugar together.
  2. In a smaller bowl mix egg, oil and vanilla. Add to dry ingredients and stir.
  3. Stir in bananas
  4. Divide into 12 sprayed or lined muffin tins.
  5. In another bowl combine topping ingredients. Sprinkle over muffin batter.
  6. Bake at 375 for 20 minutes

    I thought it would be a good idea to swap out the regular flour for coconut flour and had to thow out all 18 of them πŸ™

      I’m sorry that didn’t work out for you. I made these muffins with all purpose flour and not all flours can be substituted and get the same results as the original recipe.

    Dry is putting it lightly, i think you forgot a wet ingredient. Added some almond milk. They smelt delicious as they were cooking. Mine did not even rise.

      Hi Susan, I’m sorry these didn’t work out for you. The dough is very dry until you add the mashed bananas. You need to have very ripe bananas in this recipe. If the muffins didn’t rise, your baking powder might be old. Good luck – Kathy

    Yum! Mine were a bit dry with all the ingredients as listed, but I added a little applesauce before putting the batter in the muffin tin, and cooked for a minute or two longer, and they were perfect! The topping is wonderful!

    I just made these muffins but came out way too dry πŸ™ I don’t think my bananas were large enough (I added 3). Please include exactly how much banana after they are mashed!

      I’m sorry these turned out dry for you. I do use three regular sized bananas when I make this. They do need to be very ripe with several brown spots on the peel and the bananas easily mashable.

        in the directions it says to mix the oil and egg, but the ingredients doesn’t list oil. can you please double check this?

    These muffins were delicious, the topping was so yummy. I made a few changes, my bananas were very ripe so I lowered sugar to 1/4 cup, and used half unsweetened applesauce for the oil ( 2tb oil & 2tb applesauce) to make healthier! Next time I will try with all applesauce and no oil. They came out fantastic, thank you for sharing this recipe πŸ™‚

    Hey there! Just made these. They turned out well but I would say to add salt to the recipe! After tasting them I thought I forgot it, but I see it isn’t included. If this is how you prefer your muffins then disregard my comment πŸ™‚

    This is one of the only times EVER that a recipe actually made the amount of muffins that it said it would . I was pleasantly surprise. And they were delicious, too, even using whole wheat flour. πŸ™‚

        Don’t keep them close to apples if you don’t want them to ripen too quickly. In this case I will because I need to make more! I added some milk because they looked too dry but I think they were a bit too wet after all because the were falling apart and crumbly. They tasted amazing though .

    Dear Kathy, I cannot even tell you HOW MUCH I enjoyed this story of your kids and their cousins ringing in the New Year on sleds at midnight with the headlamps. And Grandma was right there in the mix! Wahoo!!! I grew up in RI on 100 acres out in the boonies. My parents still live there. We had a big, steep toboggan run that was maybe 1/8 mile long. It was great going down. It was the hiking back up that was the downer. No chair lifts, if you catch my drift! (Pun intended) The oatmeal crumb topping looks scrumptious on these muffins. I’d love to have one (or 5) for breakfast tomorrow. With coffee. And, I’ll just watch the kids sledding from the window. πŸ™‚

          Yes, you can freeze these muffins. Freeze in a single layer in a plastic bag or freezer safe container. Allow to thaw at room temperature.

    Happy New Year Kathy! I just laughed at this post…staying up till midnight. Nope. We go to bed at 9 p.m. sharp (big losers here) and unlike everyone else, my New Year’s resolution is too be less strict with my diet and allow things like yummy muffins once in awhile. Especially ones loaded with fiber and are overall pretty good for you. Can’t wait to try!
