Blueberry Lemon Popsicle

Popsicles made with yogurt, lemon and blueberries.

Ingredients

  • 1 cup vanilla yogurt
  • 1 Tablespoon lemon zest
  • 1 Tablespoon lemon juice
  • 1 cup blueberries

Instructions

  • Place everything into a food processor. 
  • Blend until well blended.
  • Pour into popsicle molds.
  • Freeze for at least 2 hours until frozen. 

Notes

Tips:
  • Allow enough time for the popsicles to freeze. Time will vary depending on your freezer and the size of your molds.
  • Popsicle molds vary in size. This recipe used ¼ cup capacity molds. Double or triple this recipe as needed.
  • Don't overfill your molds. The filling does expand a bit as it freezes.
  • Excess filling can be eaten as a smoothie or refrigerated for later.
