Blueberry Lemon Popsicle
Popsicles made with yogurt, lemon and blueberries.
Servings: 6 Popsicles
- 1 cup vanilla yogurt
- 1 Tablespoon lemon zest
- 1 Tablespoon lemon juice
- 1 cup blueberries
Place everything into a food processor.
Blend until well blended.
Pour into popsicle molds.
Freeze for at least 2 hours until frozen.
- Allow enough time for the popsicles to freeze. Time will vary depending on your freezer and the size of your molds.
- Popsicle molds vary in size. This recipe used ¼ cup capacity molds. Double or triple this recipe as needed.
- Don't overfill your molds. The filling does expand a bit as it freezes.
- Excess filling can be eaten as a smoothie or refrigerated for later.
