Combine flour, oats, brown sugar, cinnamon, baking powder and salt together.
1 ½ cups flour, 1 ½ cup oats, ¾ cup brown sugar, 1 teaspoon ground cinnamon, 1 teaspoon baking powder, ¼ teaspoon salt
Add butter and stir until combined.

Place half the crust mixture into a 9 x 13" greased baking dish. Press mixture down so it makes an even crust.
Bake crust in a preheated 375 degree oven for 15 minutes.
Filling
Combine peaches, corn starch, brown sugar and cinnamon together in a bowl.
5 cups peaches, 3 Tablespoons corn starch, ½ cup brown sugar, 1 teaspoon ground cinnamon
Assemble Bars
Allow baked crust to cool slightly.
Spoon peaches out and place on top of crust. Don't use all the excess juice from the peaches.
Crumble remaining crust over the peach filling.
Bake in a preheated 375 degree oven for 45-50 minutes.
Allow bars to fully cool before slicing and serving.
Notes
Bars are best eaten on the same day as baked
Fresh or frozen peaches may be used. If using frozen, allow peaches to thaw before using.
Use a slotted spoon to remove peach mixture. Some juice added to the bars is okay, but the extra juice should be discarded.
Baking Tips:
Use old fashioned oats (also called rolled oats) for this recipe. These oats are hearty and will hold their shape.
Peel your peaches. Some peaches can be peeled raw by just using a paring knife. Others will need to be blanched first and then peeled. Try removing skin first and then move to blanching if needed.
This recipe calls for 5 cups of chopped peaches which is approximately 5 large peaches. If you end up with a bit more than 5 cups, just add them in. The filling doesn't require precise measurements.
Allow bars to fully cool before cutting and removing from pan.
