Peach Crumb Bars

Delicious dessert with an oatmeal crust and topping and a juicy peach filling.

Ingredients

Crust

  • 1 1/2 cups flour
  • 1 1/2 cup oats old fashioned or rolled
  • 3/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup butter melted

Filling

  • 5 cups peaches peeled, pitted and chopped
  • 3 Tablespoons corn starch
  • 1/2 cup brown sugar
  • 1 teaspoon ground cinnamon

Instructions

Crust

  • Combine flour, oats, brown sugar, cinnamon, baking powder and salt together.
  • Add butter and stir until combined.
  • Place half the crust mixture into a 9 x 13" greased baking dish. Press mixture down so it makes an even crust.
  • Bake crust in a preheated 375 degree oven for 15 minutes.

Filling

  • Combine peaches, corn starch, brown sugar and cinnamon together in a bowl.

Assemble Bars

  • Allow baked crust to cool slightly.
  • Spoon peaches out and place on top of crust. Don't use all the excess juice from the peaches.
  • Bake in a preheated 375 degree oven for 45-50 minutes.
  • Allow bars to fully cool before slicing and serving.

Notes

  • Bars are best eaten on the same day as baked
  • Fresh or frozen peaches may be used. If using frozen, allow peaches to thaw before using.
  • Use a slotted spoon to remove peach mixture. Some juice added to the bars is okay, but the extra juice should be discarded.
