Ingredients
Crust
  • 1 1/2 cups flour
  • 1 1/2 cup oats old fashioned or rolled
  • 3/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup butter melted
Filling
  • 5 cups peaches peeled, pitted and chopped
  • 3 Tablespoons corn starch
  • 1/2 cup brown sugar
  • 1 teaspoon ground cinnamon
Instructions
Crust
  1. Combine flour, oats, brown sugar, cinnamon, baking powder and salt together.

  2. Add butter and stir until combined.

  3. Place half the crust mixture into a 9 x 13" greased baking dish. Press mixture down so it makes an even crust.

  4. Bake crust in a preheated 375 degree oven for 15 minutes.

Filling
  1. Combine peaches, corn starch, brown sugar and cinnamon together in a bowl.

Assemble Bars
  1. Allow baked crust to cool slightly.

  2. Spoon peaches out and place on top of crust. Don't use all the excess juice from the peaches.

  3. Bake in a preheated 375 degree oven for 45-50 minutes.

  4. Allow bars to fully cool before slicing and serving.
