  • 1 whole small onion diced
  • 3 whole large carrots diced
  • 2 whole stalks celery diced
  • 2 cloves garlic minced
  • 1 Tablespoon olive oil
  • 10 cups homemade chicken broth
  • 2 leaves bay
  • 1 cup cooked chicken chopped or shredded
  • 1 cup small salad macaroni pasta uncooked
  • 1 teaspoon salt
  • 1 teaspoon pepper
  1. Heat olive oil in a large pot.
  2. Add onions, carrots and celery. Saute on medium heat for 3-5 minutes.
  3. Add garlic, stir for 30 seconds, just until fragrant.
  4. Add broth and bay leaves. Simmer for 20-30 minutes
  5. Add pasta. Simmer for 5 minutes..
  6. Add chicken. Simmer for 3-5 minutes until chicken is heated through and pasta is cooked.
  7. Add salt and pepper.
  8. Remove bay leaves, serve.
Recipe Notes

If you use store bought broth, you will not need the full amount of salt. Add to taste.
