Chicken Soup with Pasta

Ingredients

  • 1 whole small onion diced
  • 3 whole large carrots diced
  • 2 whole stalks celery diced
  • 2 cloves garlic minced
  • 1 Tablespoon olive oil
  • 10 cups homemade chicken broth
  • 2 leaves bay
  • 1 cup cooked chicken chopped or shredded
  • 1 cup small salad macaroni pasta uncooked
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  • Heat olive oil in a large pot.
  • Add onions, carrots and celery. Saute on medium heat for 3-5 minutes.
  • Add garlic, stir for 30 seconds, just until fragrant.
  • Add broth and bay leaves. Simmer for 20-30 minutes
  • Add pasta. Simmer for 5 minutes..
  • Add chicken. Simmer for 3-5 minutes until chicken is heated through and pasta is cooked.
  • Add salt and pepper.
  • Remove bay leaves, serve.

Notes

If you use store bought broth, you will not need the full amount of salt. Add to taste.
